Need recipe for 1900 Park Fare and CRT

Does anyone have the recipe/recipes for the mashed potatoes at 1900 Park Fare and the breakfast potatoes at Cinderellas breakfast? And Cinderella's cheese french toast with apples on top? Thanks for your help. I am having detox after these wonderful dishes.
 
Au Gratin Potatoes
from Cinderella’s Royal Table breakfast in the Magic Kingdom!

Serves 6.

1/4 tsp. garlic salt
1/4 tsp. white pepper
1/2 tsp. salt (optional)
3 cups milk
1 cup shredded mild cheddar cheese
4 cups diced and cooked potatoes
1/2 cup flour
1/2 cup fresh and cooked bacon bits
1/2 cup diced onions
1/4 cup melted butter

Preheat oven to 350 degrees F. Dice and cook the potatoes. Dice onions. Gather remaining ingredients. Melt butter. Add onion and saute. Add bacon and cook for 2 minutes. Add flour and stir to make a paste. Cook for 5 minutes.

Add 3 cups milk. Stir until lumps are gone. Cook mixture 10 minutes and continue stirring. Add potatoes, cheese and seasonings. Mix until cheese is melted.

Bake at 350 for 10 minutes.

I don't have mashed potatoes specifically from 1900 Park Fare, but have these - maybe they're close:

CHEF MICKEY'S MASHED POTATOES

2 1/2 lbs. peeled potatoes
8 oz. butter (2 sticks)
2 C. hot milk
4 oz. (1/4 C.) grated parmesan cheese
3 oz. scallions chopped
1 tablespoon salt
1 tablespoon pepper

Peel the potatoes and cut into chunks and boil about 15 minutes until tender. Mash, using a potato masher or a heavy fork. Put back in the pot with the butter, cheese, scallions and milk. Blend well, adding salt and pepper to taste. (Do not use a food processor for this recipe.)

When we were there, the French Toast did not have apples on it. This is the recipe as we had it at Cinderella's:

Cinderella's Cheese French Toast
from Cinderella's Royal Table, Magic Kingdom

3 each eggs
2 cups milk
1 tablespoon vanilla extract
3 tablespoons baking powder
6 tablespoons sugar
2 cups all-purpose flour
1 quart frying oil
6 each cheese Danish, cut into quarters
Mix eggs, milk and vanilla together and set aside. Sift baking powder, sugar and flour together and add to egg mixture. Allow to stand for 10 minutes.

Bring Shortening to 375°. Dip cheese Danish in egg batter and place dipped bread in fryer until golden brown on one side and turn over to brown the other side. Roll in cinnamon/sugar and serve.
 
Wow, thanks so much piratesmate. I have not had Chef Mickey's potatoes. Are they the same as 1900 Park Fare? I know they had maybe a sweet potato in them. Or some kind of orange root veggie. Thanks again.
 

You know, that's odd. I wonder if it's a new recipe or we just missed them?? We ate at 1900 for dinner in May 01 - none of us remembered having mashed potatoes. (which is odd because DS LOVES them!) Were they spiced? We stayed at AKL & really liked the FuFu at Boma's. They are half white & half sweet potatoes with some spices.

Yield: 8 servings
1 pound Sweet Potatoes, peeled, medium dice
1 pound Potatoes, peeled, medium dice
To taste Salt and Pepper
2 T. Coriander, roasted
2 T. Cinnamon, toasted
¼ cup Sugar
¼ cup Butter

Steam all of the tubers until tender. In a mixer mash everything together. Check the seasoning, adjust if needed. Make sure the potatoes are cooked well.

[NOTE: The recipe fails to mention that you need to add liquid or they're as stiff as a board! ;) When I make them I only use the water from steaming the potatoes - no milk. Also, you may want to cut the spices to 1/4 of what it calls for & then taste-add-taste-add. I use fresh spices (not canned from the grocery) and the amounts given can be overpowering.]

That is odd. I wonder if they mashed potatoes are new to the buffet. They did not taste sweet at all. They tasted like really good mashed potatoes but they had an orangey color to them. They were real creamy. They did not need any gravy at all. I might try emailing guest services for the recipe. If I get it I will give it to you. Thanks for all your help and the FuFu recipe sounds really good.
