need opinions on our schedule

I'm new here and could use some help. We are headed to Disney December 3-10. (With half the free world, I think!)
I have done so much research- these boards, Tour guide Mike, Len's site, multiple books, etc. I've learned a ton, but still need opinions.

Here's the background:We are not doing any ADR's. We are doing MVMCP on the 6th. We have 7 day passes, but not hoppers. We are staying off-site. We have myself, DH, and 3 DS's, aged 10, 6, and 2. I'm trying to avoid the crowds as much as possible. Which days would you go to which parks?

Right now, this is our tentative schedule:
Sat. 3rd: Epcot
Sun. 4th: MGM, but I'm worried about the EMH
Mon. 5th: MK, We want to see Spectro
Tues. 6th: AK, again with the EMH; MVMCP that evening
Wed. 7th: Epcot, figuring we'll need to sleep in a little
Thurs. 8th: MK
Fri. 9th: either MGM, not sure about Pop Warner crowds, or AK again
Sat. 10th: fly home

Does anybody have any ideas of which days I should switch around to get the most bang for my buck? HELP! Thanks!

I also always stay off-site...so I like to avoid the parks with the EMH that day. It's okay if you have a hopper (which I never have had) b/c you could go to a park in the morning that had an evening EMH...but that's not the case. So...unless there is a really good reason (that I don't know about) for going to the parks the days you are, I'd avoid the EMH parks on those days.

No reason, except trying to work around the set things.
Like we want to see Spectro, which puts us in MK on Monday. We're also trying to get 2 evenings in MGM to do both Fantasmic and Osbourne Lights and trying to avoid the crowds in MK for the Christmas parade taping, etc.
I just feel like the schedule is a puzzle where the pieces aren't fitting.

We have been the past several years around this time and the crowds are very low. I dont think EMH is going to impact your park days all that much, if at all. On our trips we have found many attractions to be a walk on and when there was a wait it was a very short one.
