Need Meal Planning Help

We've been asked to provide one meal over Christmas at my In-Laws that would serve the family. We know right off the bat that there need to be at least two meal choices. In the family there is someone following Atkins, and there are two vegetarians. We need something we can cook ahead of time that will travel with us.

Our ideas thus far are:
Vegetarian Lasagna
Regular Lasagna (but how can we do this for the atkins)

Boca Burgers
Hamburgers (could then be bunless)

Anyway I am looking for more ideas/recipes/suggestions etc....If anyone has any ideas let me know.

Chili is not an option (thought about that one too but there are sensitive stomachs)
 
I sometimes make a crustless quiche that is really good. I also have a spaghetti squash/tomato/Italian casserole type thing that I have made before. I think it has sausage in it but perhaps could be made without it. There is also an old WW recipe that uses cabbage in place of lasagna noodles. All of these would take a little bit of work, but let me know if you want any recipes.
 
Could I have the recipe for the Italian Casserole and the lasagna w/ cabbage? Those sound like real possibilities.
 
Hi, Beth! I think your idea for a veggie lasagna is an excellent one.

I have a recipe for a delicious chowder that might be a good choice for you. It uses chicken broth as the base and includes diced chicken breast, sliced apples, diced onions and corn, with some great spices. I make it for our tailgate parties as a non-chili option. Let me know if you want me to post the recipe.
 

Ok, you've stumped me on the travelling. But maybe you could do one vegetarian lasagna, one platter of italian sausage, steamed veggies, and then maybe extra tomato sauce and cheese on the side. A little bit for everone?

OR you could marinate some tofu and marinate some chicken (in separate containers of course), stirfry both with veggies, and then serve with brown rice.
 
The travelling part has me stumped too but we really want to make it ahead of time. I've gotten some great ideas!!!

I should also add the meal will be for about 16 people

Here are the two recipes. I think they should work for the low carb people.
