Need ideas/recipes for Cinco de Mayo celebration!

HELP!! I have been invited to a Cinco de Mayo celebration and I need to bring a dish for this themed evening. The few things I have thought of (taco, enchilladas, fajitas, seven layer dip) are taken by someone else, so I need some ideas. Would love to bring a neat dessert, but not sure what would fit the celebration. Any thoughts, dessert or other would be greatly appreciated. Thanks!
 
This is one of my faves thanks to Bobby Flay:

Black Bean and Corn Salad

2 cups black beans, cooked, rinsed
1 ear corn, boiled, kernels removed from the cob
1/2 medium red onion, diced
1/2 medium red bell pepper, diced
1/2 medium poblano pepper, diced
1/4 cup chopped cilantro (leaves and stems)
1/2 cup lime juice
1/4 cup olive oil
1/2 tablespoon ground cumin
1/2 tablespoon black pepper
1 tablespoon salt

Combine the beans, corn, onion, peppers, and cilantro in a large bowl. Whisk together the remaining ingredients in a small bowl and pour over the bean mixture. Chill the salad for 2 hours before serving.

Pork Roast
Garlic
red pepper
chili powder
cumin
onions
green/red pepper
Jalapeno's-if you want to really spice it up

Slow roast in the oven.. or

Throw it in the crock pot.. cook it forever... well until you can shred it with a fork.



Serve it with some tortillas.. and girl you got a winner!
 
Take beer. Every mexican party I've been to they have beer avail. (I'm married to a 1/2 hispanic so I know beer is like having water to them.). Beer is a dish right? Or how about beer soaked sausages to be grilled?....yum! Very easy and oh so yummy. The flavor is so good. I'm hungry now.
 
How about a yummy fruit salad? Some pineapple, mango, guava, and other tropical fruits would be very cool and refreshing! You could also put the fruit on either wooden or sugar cane sticks to make tropical fruit kabobs.

Flan is not hard--they even have mixes/kits at the store.
 
I'm going to a Cinco de Mayo party and bringing Kahlua brownies. Never made them before but they sure sound good! Google kahlua brownies for a ton of ideas.

Yes, but call it "Queso". ;) Put it in a crockpot and you are good.

You could also make homemade guacamole in front of everyone. That is "the thing" here.
I have not done it, but they do it in the restaurant and it looks easy.:confused3 Has to be fresh made in front of you.

oh and BEER...:thumbsup2 VERY COLD BEER.
