I am making 2 kinds of brownie cookies (made with boxed brownie mix) for Christmas Eve. One of them will be a chocolate cookie with Andes Candies pieces on top. The other will be a chocolate cookie with a Cherry Andes Candies on top that I will spread once it melts. I'm wondering if I'll be able to freeze the cherry ones once I "frost" them with the melted Andes Candies. I have a feeling since it's just a melted candy on top of the cookie, that it might separate from the cookie once it freezes.

Anybody ever make and freeze these types of cookies? Tips please!

Never made that exact cookie but have frozen many other type of frosted cookies with no issues. Browies topped with chocolate ganache freeze well as do any type of Christmas cookies with royal icing. The only things I find don't freeze well are flaky or custard filled pastries which tend to get soggy/watery when you thaw them. For creme puffs, I freeze a batch of empty shells and then fill them with whatever custard I plan to use once they have thawed.

If yours doesn't freeze well, try adding the candy topping after you thaw the base cookie.

Thanks! After thinking about it, I decided to bake them and freezing them as is. Then Christmas Eve, I'll take them out, melt down the Andies Candies and then frost them. Thanks again!

I freeze peanut butter cookies with Hershey kisses on them. They usually do fine.
