DH had his cholesterol levels tested and while they are not bad they are a little elevated so his Dr. wants him to change his diet and exercise over the next 6 months before coming back to get re-tested.
I know that he needs to limit red meats, avoid fried foods, increase the number of vegtables he eats but I was wondering if any of you knew of any good cookbooks or recipe websites where I could find good tasting low-cholesterol meals to help him out a little. Recipes where I can "sneak" in a few extra veggies would be extra helpful because I have a hard time getting him to eat veggies plain (he is worse than a little kid
).
He is allergic to all legumes (beans, nuts, pea, etc.) so that makes going vegetarian not an option.
