DH had his cholesterol levels tested and while they are not bad they are a little elevated so his Dr. wants him to change his diet and exercise over the next 6 months before coming back to get re-tested.

I know that he needs to limit red meats, avoid fried foods, increase the number of vegtables he eats but I was wondering if any of you knew of any good cookbooks or recipe websites where I could find good tasting low-cholesterol meals to help him out a little. Recipes where I can "sneak" in a few extra veggies would be extra helpful because I have a hard time getting him to eat veggies plain (he is worse than a little kid ;) ).

He is allergic to all legumes (beans, nuts, pea, etc.) so that makes going vegetarian not an option.

Thanks!

Don't forget that when you make casseroles, you can always reduce the amount of meat in them and increase the veggies. I do that to cut down on food expenses, but it's good for you too. Most of us get way too much protein anyway. Just don't make them casseroles that have a can of cream of whatever soup and cheese. :)
