Need a recipe for cornbread

(I posted this on the CB before I remembered that there is a cooking board here!)

OK- just put ingredients in my crockpot for White Chicken Chili (it's finally a day that promises to feel like fall in TX) and I want to serve it with some good cornbread. My DH likes sweet cornbread, and I've tried a couple of recipes in my cookbooks with not great results yet. So I thought I'd ask and see if anyone here has a good recipe.

I'll even trade you the White Chicken Chili recipe...it is sooooo good and so easy.

White Chicken Chili:
1 lb boneless, skinless chicken thighs or breasts
1 c. white beans, rinsed
1 med. onion chopped
1 clove garlic, minced
2 t. oregano
1/2 t. salt
1 can cream of chicken soup
5 c. water

In a slow cooker, combine all the above ingredients and mix well. Cover and cook on low 8-10 hours, until beans are tender. Just before serving, add in:

1 t. cumin
1 4.5 oz can chopped green chilis
1/2 t. hot pepper sauce

(don't add these before or it will take the beans longer to soften)
 
This is my favorite recipe....I don't always make them as muffins...in a 8x8" pan works well too.

Corn-Cheese Mighty Muffins

Amount Measure Ingredient -- Preparation Method

1 1/4 cups flour
1 cup yellow cornmeal
1/3 cup sugar
3 1/2 teaspoons baking powder
4 ounces firmly packed shredded sharp Cheddar
1 cup milk
1 large egg
1/4 cup butter or margarine

In a large bowl, mix flour, cornmeal, sugar and baking powder. Reserve 2 tablespoons of cheese.
Stir remaining cheese into flour mixture. Form a well in center of flour mixture.
In a small bowl, beat to blend milk, egg and butter. Pour into well in flour mixture. Stir just until lightly blended, batter will be lumpy.
Spoon batter equally into 4 greased 6 ounce custard cups or 6 greased muffin cups. Cups will be heaping full. Sprinkle with reserved cheese.
Bake filled custard cups at 375 degrees for 35-40 minutes or muffin cups at 400 degrees for 25-30 minutes.
Let cool about 5 minutes. Remove muffins from cups or pans and serve hot or warm.
 
Buy Martha White Cornmeal Mix. Follow the recipe on the side for Southern Cornbread, but add 1 or 2 tsp. sugar.
 

The secret to good cornbread is to make it in an iron skillet. Even a mix will turn out good this way. Heat the skillet on the stovetop and melt a tablespoon of shortening in it to grease your pan. When it is hot, add your batter and bake at 350 for about 20 minutes.

Thanks so much for the chili recipe! I have been trying to make this since last year when I tried it at a local restaurant. Mine has never come out quite right but I think this recipe may just be the one.
 
In addition to what jipsey suggested, I sometimes add a can of creamed corn (leave out some of the milk that the mix calls for to get the right consistency) and add some grated cheddar cheese....yummy....

I cook mine in an iron skillet too HunnyPots! You are right, it does make all the difference in the world!

Thanks everyone again. I'll definitely try the skillet next time. Tried the Jiffy box last weekend, and it was great- just sweet enough. Maybe next time I'll be braver and try it from scratch.
