Ask and ye shall receive, that is what they say right? Well, I asked for a bread machine at Christmas and I got it! Finally broke it out of the box today and am making my first loaf tonight. I am hoping to not buy a loaf of store bread this year! The money I save on bread alone for a family of 6 (we pack lunch most days for all 4 kids) will add to my addiction, I mean Disney fund.

Do you have any favorite recipes for your bread machine?
 
What kind of bread machine did you get? What kind of bread did you make? Enquiring minds need to know..... Please come back and tell us how your first loaf turned out. :thumbsup2
 
Here is my Whole Wheat recipe that I use every week:

1 cup + 2 TBSP Water (you can also use milk)
1 tsp Salt
2 TBSP Oil (I use Extra Virgin Olive)
2 TBSP Molasses
1 Egg
3 cups Whole Wheat Flour
1/3 cup Quick Oats
1/3 cup 7 or 8 Grain Cereal
1 tsp Ground Flax
2 tsp Yeast

I don't buy bread machine flour or yeast. I get the Grain Cereal in the bulk section of the grocery store. I bought a big bag of Yeast at Costco and store most in the freezer and keep some in a container in the fridge.

You can add sesame seeds or sunflower seeds if you want. If I run out of the grain cereal, I just add more oats.

I don't cook mine in my Bread Machine as I find it drys it out too much. I have a machine that is over 10 yrs old, so maybe the newer machines don't do that.
 
I bake in the oven, 20 mins at 200 and 20 mins at like 325. It was suggested for one of the breads I make a lot, and it works well with almost any bread. It helps it rise again before baking, so it gives a bigger, softer loaf.

Honey wheat rolls -
I can't seem to find the recipe but I have it printed out. It's a bit different than the white version, and doesn't include the egg, but uses vegetable oil in it.

I use the bread machine to mix/rise the dough, then bake it in the oven. I do however make up cake mixes in bread machine. They turn out a lot more moist than in the oven.

Hamilton Beach HomeBaker. I made milk loaf for my first go. It isn't as fluffy as I would have liked, but I think that is because the milk was not warm enough to activate the yeast completely. I am going to keep working at it and tweak as needed.
 
Don't use scalding liquid though, that will kill the yeast as well.

When I get water out of the tap, I nuke it for 30 seconds. If I pull it from the fridge usually 45 to 60 seconds should do.

Ohh and if you bake it in the oven, go for aluminum pans or glass/clear. Dark/non stick can burn it more easily. You can also get a bread stone for baking. And in a recent topic I made, you can get a fireplace stone (terra cotta) at Home Depot for fairly cheap for baking breads on it.
 
I received my bread machine 3 years ago for Christmas and haven't bought a loaf of bread since. My favorite recipes are on King Arthurs flour website. Our favorites are Honey-Wheat rolls, Beautiful buns for sandwichs during the week. The Oatmeal Toasting bread is amazing. Pita pockets are very good.

Tonight we made our own pizza dough, tomorrow night we are making tortillas for taco's. Also tried making strawberry jam for the firts time in it yesterday - is very yummy - didn't add any pectin so I am waiting to see how it firms up after being in the fridge.

I was hoping to get baguette pans and a new england hot dog roll pan for christmas. But I didn't. Very disappointed. Maybe Valentines day???

Almost forgot the recipe - my DS 15 and friends love this bread.

Soft as Wonder Bread

1 cup water (room temp.)
1 teaspoon salt
3 tablespoons margarine
1 tablespoon honey
3 cups all-purpose flour
1/4 cup powdered milk (not skim)
2 teaspoons sugar
1 1/2 teaspoons bread machine yeast
Directions:
1Add ingredients in order given (this is for my machine, your's maybe different). 2Select dough cycle. 3When done, take out dough and on a floured surface, shape into loaf and place in loaf pan. (I try to work it as little as possible). 4Let rise in a warm place for approximately 40 minutes until doubled in size. 5Bake on centre rack of preheated 350 degree oven for 25-30 minutes. 6Cool on wire rack before slicing.

I use powdered skim milk and haven't had any problems. I can't find powdered whole milk.

I should also mention I don't cook the bread in the machine but in the oven.

I received a bread machine for Chrsitmas too! Besides making bread we have made cinnamon rolls, pecan sticky buns and soft pretzels. I love the bread mixes you can buy at the grocery store with everything you need included - makes it very easy to make fresh, warm bread.

Aren't the bread mixes almost as much as a loaf of bread?
 
I have a basic bread maker, and I usually use it to mix my dough for rolls but the loaf size wouldn't be big enough for our family....I'd be making a loaf of bread every other day. I usually buy the 2lb loaf size at the store, do they make a 2lb loaf breadmaker?
 
Yes, my machine makes a 2 lb loaf if I want :)

I have a Zojirushi and just love it. The best thing about it is that I can put all the ingredients in the machine cold (my yeast comes straight from the freezer) and the machine warms everything up before it starts to mix.

I also *rarely* bake anything in the machine. I just use the dough feature and then shape and bake myself.

I make pizza dough, oatmeal rolls, hamburger buns, the best dinner rolls, cinnabons, foccacia, all kinds of breads, etc. Yum!
 
What loaf size bread maker do you have?

I have a bunch of recipes some with both sizes (1.5lb & 2lb)

Crusty French Bread

1 1/4 cup Water (warm)
2 tsp Sugar
1 tsp Salt
3 1/2 cup White Flour
1 1/2 tsp Yeast


Ciabatta

1 1/2 cups Water
1 1/2 tsp salt
1 tsp Granulated Sugar
1 tbsp Olive Oil
3 1/4 cups All-Purpose Flour
1 1/2 tsp Yeast


For the Whole Wheat recipe that I posted earlier, you can leave out the egg if want.
 
I got a Zojirushi at the flea market. I made a couple loaves in the machine for testing. I didn't find it that much greater than the Sunbeam or Oster I use. But it sure did bring a nice price on Ebay. Plus it was the highest watched item I've ever seen. I think it topped out at 52 watchers.
 
I bought a bread machine 3 years ago when DS was diagnosed with Celiac. Gluten free breads that are pre-made are expensive and taste like cardboard. The bread we make in the machine is just like homemade "regular" bread. We buy mixes though because the GF breads require so many funky ingredients (xanthum gum, etc.).
 
We just got one for Christmas too! I refuse to buy bread from the grocery store anymore! It has too many 'fillers' and preservatives in it!!! YUCK! My daughter has had many health issues with digestion and we found out about 4 months ago that her body cannot absorb high fructose corn syrup, corn sugar, honey or a lot of the 'man made sugars' out on the market. Well, that left us 2 different types of loaves that we could purchase in the store...they were costing us a lot more than just a basic loaf of bread!

SO, I asked my hubby to get me a bread maker for Christmas. I use it every two or three days! Some days I'll use it 2-3 days in a row!

One of our favorite recipes that I've made several times now just in the last few weeks is Cinnamon bread. In fact, my kids beg for me to make it as soon as we are done with a loaf!

Bread Machine Cinnamon bread:
1 cup of water
1 egg, beaten
2 tablespoons real butter
3 ¼ cup of bread flour
¼ cup sugar
1 teaspoon cinnamon
1 teaspoon salt
1 package or 2 teaspoons yeast

Whisk the egg until it's frothy.
Add the ingredients to the bread pan in the order listed.
Make a well in the flour and place the yeast in the well to keep it separate from the wet ingredients.
Use the knead setting on your bread machine to knead the dough.
When the cycle is complete, roll out the dough to a 13x9 inch rectangle.
filling:
1 TBSP room temp butter...RUB all over the 13x9 bread rectangle and sprinkle with:
Cinnamon, sugar and brown sugar. People seem to like different amounts of each of these, but what works for me is 3 TBSPNS Cinnamon (more or less if you like otherwise!), 3 TBSPNS Brown sugar and 2 Tbspns sugar. Like I said, go by what YOU feel your family will like with this 'cinnamon sugar mixture' because I've had to change my amounts twice before we got the right one for us.

THEN, Roll up the bread. Seal all of the edges, so filling won't leak out and bake in a sprayed loaf pan.


I have a smaller loaf pan, so i actually 1/2 the dough and make 2 of these rolls. I bake mine for about 15 minutes, but start checking it around the 12 minute mark. Take it out of the oven, rub a small amount of butter on top and sprinkle with a little more cinnamon and sugar (leave out the brown sugar in this step). It is so yummy!

My girls love the 'swirls' in the bread loaf. They love to bring it to school in their sack lunches! I've had to limit them!

We also love this buns recipe

1 1/4 cups milk
1/4 cup white sugar
1 tablespoon fast rising yeast or 1 tablespoon bread machine yeast
1/4-1/3 cup olive oil
3 3/4 cups bread flour
1 teaspoon salt
1 egg , lightly beaten

Put the ingredients in bread machine pan in the following order: milk, oil, sugar, salt, beaten egg, and flour. Make a little well in the flour and add the yeast to flour. Put bread machine on the dough setting, let it finish and then spray a baking dish/pan and start to form rolls placing them on the pan. (Give them enough room to raise so that they touch after baked) Cover them with saran wrap (coat lightly with cooking spray so it won't stick to the rolls). Let them raise for about 45 minutes to an hour- it will depend on the heat/moisture in your kitchen...then bake 12-17 minutes at 350 degrees. cool on a cooling rack and store in plastic bag (they MUST be completely cool before putting them into the bag, or they will become soggy.)
 
I'm loving this thread. Especially the ideas about using the machine for mixing and proofing. And suggestions for meat and cheese rolls/bread?

The Zo has a stronger motor than the others, along with two paddles. You need this when you are making a lot of whole wheat breads which are harder to knead.
 
This is a "duh" moment for me. I was given a breadmaker for Christmas about 5 years ago. I always baked in the machine. Never thought of kneading and mixing the dough, then baking in the oven. Yup, a "duh" moment. The lighbulb just went on in my head! Now to get the breadmaker out of the basement :).
