My DD is now 7 and the following are things she must see/do to make it a disney trip!
At Magic Kingdom
Splash Mountain
Buzz Lightyears Space Ranger Spin
Its a Small World
Spectromagic parade (only certain nights)
Character Breakfast/Lunch at the Crystal Palace
(pooh,eeyore,piglet,tigger)
and Space Mountain
also the pooh ride and all of Fantasyland

Playhouse Disney Live
Beauty and the beast
muppets 3d
voyage of the little mermaid

rock and roll rollercoaster (48'" min hgt)

spaceship earth
Ellens energy adventure
all the interactive stuff at innovations

forgot the name but the interactive pavillion next to ellens energy adventure

animal kingdom
birds of ?? flight?? - its a show with birds if you want to be part of the show sit in the center back row of the seats when they ask if anyone has a dollar raise your hand quickly

she loves all the animal exhibits - its really a great park/zoo/themeplace
Tips for you
food is expensive - pack water juice boxes snacks - we even packed sandwiches (Gladware rules) If you are staying in a room with a fridge- freeze juice boxes the night before and they keep sandwiches/fruit/etc cold.
I have this great backpack that has a detachable minicooller that clips to the main sac and holds 4 juiceboxes and 6 sandwich sized gladware containers also as most backpacks do - on the sides there is pockets to hold bottles of water we take or rubbermaid insullated wtr bottles fill with ice and as it melts you have cold filtered water. Also for about $15.00 buy the magical moments game it will keep your nephew entertained in lines and its interactive with some of the rides or so I am told by DH and DD- its sold in all wdw resort gift shops and at most wdw park gift shops and kiosk
