I think the only time you're subjected to nothing-but-SW is on the day at sea on the Fantasy. There is literally nothing going on NOT SW from what I could tell on the Navigator. (I assume the Magic will be that way with the super hero stuff when they do that.
I would think that while the new SW thing will be playing, they'll be showing Moana and other recent-ish legit Disney movies.
When I called Friday, they told me these were the ones playing on the Wonder, but are subject to change:

Finding Dory
The BFG
Pete's Dragon
Dr. Strange
Moana
Rogue One
They tend to keep movies running onboard longer than land-based theaters. Mostly the most recent releases, as well as those that are extremely popular. I think Frozen ran almost 2 years on the ships.
If it's Disney and it's been released in the last 6 months or so, chances are, you can see it in the Buena Vista theatre (Funnel Vision is a whole different ballgame). If it's really popular (like, as Shmoo mentioned, Frozen, or I remember happened with The Force Awakens) those may show longer.
It's the most recent Disney movies released--so if you have a 7 night cruise, you'll maybe have the last 7-10 movies they released--which does go back quite a ways.
