Good Eats Roast Turkey

Good Eats Roast Turkey
Go to Food Network's Thanksgiving Menu

1 (14 to 16 pound) frozen young turkey
For the brine:
1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1/2 tablespoon allspice berries
1/2 tablespoon candied ginger
1 gallon iced water
For the aromatics:
1 red apple, sliced
1/2 onion, sliced
1 cinnamon stick
1 cup water
4 sprigs rosemary
6 leaves sage
Canola oil

Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.

Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining.

A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.

Remove bird from brine and rinse inside and out with cold water. Discard brine.

Place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other neutral) oil.

Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving.

Melinda, I will take a peek at those books..thanks for the suggestion. Problem with DS is that he reads at 4th - 5th grade level, even tho he's only in 2nd grade. I like to think that he gets his love of reading from me, since I must always have a book to read and one "on deck". :laughing:

No names. We need to get crack-a-lackin'. Actually we had a really good name discussion the other night and I remember agreeing on several options but I have no clue what we were discussing. Of course that was when I was very sick and before I started my meth-lab cure.

Speaking of which- I am generally anti- antibiotic. I never ask for them. My kids only get them for pinkeye, strep and ear infections. However- my doctor was right on!:thumbsup2 I feel soooo much better. Of course the key side effect is nausea which is scary 'cause my son was actually puking so I wasn't sure if I was getting the gumbomumbo or it was just the side effect.

Thank you twinkie! This made me do a silent belly laugh! Just imagine what I'd weigh on the moon!!!! :lmao:

Twinkie-- :yay: on the date of Grasshoppers Birthday Party. I decided on a second c-section for that reason too. We have no family here and picking a date to go in made it easy to drop him off at my Mom's. I was nice because it was just Hubby and me for the first two days after Hannah's was born. Then my family brought Nicholas home to see her.

It was a nice fall day today. I spent it outside. Running errands etc. Much better then the rain we just had.

UMA-- that turkey sounds yummy. Even though we already had Thanksgiving I can celebrate yours too.

Celery-- I weigh myself everyday. Don't know why I torture myself.:lmao: I guess to see that it hasn't gone up and if it went down I would say that can't be right.

Steph-- I get cramps in my legs once and awhile. Not sure what they are caused by. All I know is I wouldn't wish them on anyone. :hug:

Way back in 19-and-89 I gave birth to the most wonderful little girl on the Tuesday before Thanksgiving. We brought her home on Thanksgiving Day and we had much to be thankful for....namely a beautiful, healthy baby after a speedy-quick labor.

If Grasshopper is a girl, then I think you should name her Mary. It was my grandmother's name and the name of our sweet Thanksgiving baby. No pressure.

I had a baby in 19 and 89 too. A colicky one, though. Four months of screaming :eek: With him, God taught me patience and that it's ok to put your baby in his crib to cry if you have tried everything. I used to vacuum the house to burn some frustration and by the time I was done, he'd be sound asleep! :flower3: Thank God!

Back when I had my kids, my mom of course was planning on coming over from Germany. She took charter flights, so she booked her dates based on my expected delivery date. Of course, both were late! Every day it was, anything yet???? I really wore me out. So both times I ended up crying at the doctor's office and they decided to induce me then the next day.
It would have been so much easier if I had known the date in advance. I am pretty sure I have posted this before, but I am counting on most people having a sieve for a brain like me for minor details like this, LOL.

Lexi, I need all the Ginko Biloba I can get, but will share with you!!
 
Twinkie - I am insanely jealous of you getting to birth your baby like 6 weeks before mine. If I asked to be induced 10 days early my midwife would laugh me out of the office. I would never want to be anyway, it is always so much easier to just go on your own. Pregnant longer and labor shorter is my motto. ;)

Wendy - I always wanted to try that recipe, however I never had a container big enough to put a turkey and all that brine in. Also, I have never actually MADE a whole turkey because Thanksgiving is at my Mom's and she does the turkeys. I just bring green bean casserole and corn casserole(funny how it's called something different in different areas). When my Mom get's too old to do the turkeys I will be the first to snatch that up. That way I can control how they are cooked. ;)

We closed! Although I really am not that excited. I am doubting that our builder is going to hurry along. He has submitted our plans to the county, however he can't clear the land yet because he hasn't checked to see if it's wetlands(no way it could be). So why has he had like 2 months and hasn't checked? Not a goog sign, I'm afraid.

I almost got mowed over by some high speed chase, minus the chase. Just a bunch of cops flying down the road to a drug house bust. One of 4 they busted today in our town. This one involved the criminals fleeing on foot into the foods. Sadly this is not more than 2 1/2 miles from our house. I have never seen so many cops out and about as I did today. Thankfully I use my cruise and never speed more than 5 over. My Dad was not so lucky. I saw him pulled over around the block from our house. lol

We had hotdogs and canned potato salad. (canned potatoes, tomatoes, salt, pepper and mayo, so good!) Plus pickles, which I will regret having even my one bite of.

Tomorrow night is the Reformation Chili Dinner and Fair(for the kids), for adults it's watching a movie about someone who had something to do with the reformation. Usually pretty goog, however this year we get to watch it in Spanish dubbing with English subtitles. Blah. I think I'll see if my sister needs help with her booth(pin the theises on the door). I'm bringing a low fat dessert called, Butterscotch heaven. Made with butterscotch pudding, whipped cream and ginger snaps.

I am off to get clean and comfy. Tonight is Survivor and CSI.

Twinkie - Glad to hear you to some antibiotics. I was concerned that your cold seemed to be holding on for so long. I also hate antibiotics. My kids NEVER had any until they got their first ear infections(Jeremiah and Seth) a couple years ago. They came down with those babies after playing in a McDonalds playground with some lovely inbred kids(no kidding). I haven't let them set foot near one of those again. It's only outdoor playgrounds that the rain washes and the sun kills germs. Thankfully we actually haven't had an ear infection in over a year now! Yay!

Mommy Brag Alert: Did I tell you that my oldest DD was one of only a dozen of the 400+ in her class who got all "distinguished" ratings on her standardized testing? Made all the more awesome when you know that many of her classmates are in an academic gifted/talented program. I take no credit. She is a gift from God and we didn't do anything to deserve her. She's just excited because she gets an automatic parking space and finals exemption. :laughing:

I'm happy to report that my friend/coworker's BIL/SIL who live in the Malibu hills were able to return to their home and it was spared from the fires. They were very greatfu. My friend was concerned because they hadn't been able to reach them until last night, but her SIL had just left in a rush without her cell phone when they had to evacuate.

Anyone here get foot cramps at night?? I get them all the time and they really hurt.

Try standing under the faucet and run ice cold water on your feet. I had foot and leg cramps for several months and this always helped me sleep.

MommyP: If your contractor has a really goog paperwork guy, it won't take but a few days. If he's a former construction worker who just took it over, it could take a while. And remember, houses go up in spurts. It may take 3 weeks before they do the first 'building' and then it could go up in no time, according to how many projects they have. With the housing slump, I'd bet it goes fast.

This week has been looonnnggg. Each day has started earlier than the day before. Already at 40 hours since Monday with 4 more days in a row to go. Finally caught up and got a nice 3 hour nap today. I'm gonna take a lil sompin sompin and go back to bed. Nite all.

Awww. That is so sweet. :cutie: I would love to have a baby Mary. It is my grandmother's name too and not in use in our immeadiate family. The DH is not a fan however of the name or alliteration in general. My last name is Montessori remember;) And congrats to your Mary on her achievements!

Well, I am due 4 weeks before you! Thanksgiving would be way too early for Melchizadek Poppins. However you have a goog motto. I was miserable the last two weeks with Goldenchild who was born 12 days before his due date. I have only admiration for all those peeps who make it to their due dates and beyond.:eek: Of course I did measure 42 weeks for a whole month before the twins were born....

It is kind of a catch 22. I am happy with my decision but a little worried that I will have a miserable labor and regret it. The doctor said I could schedule an induction before Thanksgiving, Dec 3 or Dec 9. So it was the best choice considering all the factors (including the fact that if I don't schedule now the hospital will book up and will not take any inductions... so I can't wait and see)
 
What misebale labor? Drugs, Twinkie, drugs! Or the thing where they stick someting in your back (my memory fails me again!!). Although I had (or tried to) with my second one, and she came so fast, I lost out on 95% of that benefit! :mad:

And you know what they say, you forget all about it when you hold the darling baby....... (yeah, right!)

I just liked this one because it really was candid. We really were just walking along the Boardwalk holding hands and a stranger informed us that we needed a picture of the event and offered to take it. :rotfl:

Then Heisa (woo hoo!), is Weinachtstag! (this says Christmas day, but we substituted birthday for the occasion)

We watched the paperwork process and construction of our addition (800 s.f. in-law suite with full kitchen, laundry, bath and full basement) 3 years ago. Amazing how quickly they can get things done, despite the winter weather. Also, we are within 100 feet of a protected stream and wetlands, so we thought we might have a problem with that. But the construction fairy was on our side, and we breezed right through. Hope it goes equally well for you!
