Mixology

I did the both whiskey and the cognac tasting ones. Those are my drinks of choice, normally. In both cases, they were also in the evening instead of the afternoon, which was better for my schedule. These classes were much less popular than the mixed drink classes, so only like 5 or 6 people in each class. It also means they had room for late arrivals. My wife decided to join the cognac one at the last minute and they had no problem with it.

Both classes were excellent. They taught us a lot of information about how it is made and what makes a good one, much of it I knew, some I didn't. They gave us four different (fairly high end) servings. We also got to see up close (and smell the corks of) some very expensive bottles. It was laid back and relaxed. A very nice event.
 
My DW has done this twice. Last time I organized it for our cruise group. I have a very specific drink taste and the class offers too much variety for me. However, everyone in the class raved about it.

Has anyone done mixology?
My husband loves to make drinks at home, I think he would have a blast!

We've done it. It was awesome, really... but as we were a bit group (about 20), I only got to mix one drink. (But I've had 5 small mixes to drink). It was 20 or 25$...
 
We did a mixology and a martini tasting on the Fantasy. The mixology was set up like in Shmoo's photo. 5 different people went up and made drinks for all 25 of us each round. It was 5 rounds so everyone got a chance to participate. Martini tasting was in Meridian and he made the drinks and talked about the history of martinis. They brought around little sample martinis of each one.20161024_131743.jpg
On the Wonder we did Tequila tasting and it was interesting to learn about tequilas. We had 3 shots (plus I won an extra one, Yay!) and 2 or 3 mini margaritas in the same glasses as the martini ones above. We liked the jalapeño Margarita and they had leftovers so they gave us those too.
We also did Mojito and Caiprinha on the Wonder and we made 5 pretty good sized drinks that we all made ourselves. Learned lots and had a blast! The staff was so much fun and interactive.

I did a cocktail making class on the Wonder last year.

It was a bit different to what I expected. When we arrived, everyone was given mini sized versions of each cocktail. I know other people have called them half sized, but I found them really small - more like quarter size. Each "round" three people were invited to make a full sized version of cocktail to keep and drink. I was lucky enough to get a spot in the last round. If I hadn't gotten one of the limited spots, I would have been a little disappointed with the class. A number of people missed out on making and getting a full sized cocktail because the class was quite full.

That said, I'll probably do it again if given the opportunity.

I had a very similar experience on the Wonder in December. We didn't actually mix anything. The drinks were already poured and the bartender showed us how they were made. I've done th same class on a different boat and it was completely different. I felt like I wasted $25 on the Wonder. It was boring and I didn't care for any of the drinks we made.
 
We did Mixology on our last cruise and it was a blast! If you can get in on a private group class, all the better -- check around FB, DIS Boards, etc. to see if someone has already started a page for your cruise date.

Was the whiskey tasting one specific to types (i.e. scotch, bourbon, etc.)?

No, it is not. I've done whisky tasting several times and cognac a couple of times. There were Irish, Scotch and Bourbon/American whiskies represented every time in the Whisky/Whiskey tastings.

The information you get may or may not be accurate depending on your host. I've heard things presented as fact when it comes to bourbon that weren't even close to correct.
