hello -im the mom of 3 year old twins and we're actually taking them in dec (first trip)...im not gonna lie, as much as i love disney, it will be difficult for you. the only way i can see it being comfortable for them is by using the double carriage w/the double car seats. if they dont let those big strollers in then you have to put car seats on either the floor or chairs and i know from experience that can be a little nerve racking..they will be to small for high chairs ...and just a question to ponder...my twins came 2 months early and had to be in the hospital for 5 months , then they came home on apnea monitors that had to be kept on 24 hrs a day for 3 months after they were born. we had no idea they were coming early, it just happened. you never know what life is gonna throw at you, just make sure your prepared. postponing till everything settles might be the better route..good luck. 
)Though hearing about the Tower of Terror is _not_ the same at least he got to do it and it is just one of those things parents do for their kids.
Our situation was a little different since our first to WDW with them was when they were 3, and we only had the two of them, no older siblings.
