Check out the Occidental Grand Xcaret. That is an all inclusive, beautiful resort. We stayed there and it was awesome.

We stayed here about 6 years ago and had a great time! The rooms were clean, the grounds were beautiful, and the snorkeling great for young kids since it is in an inlet. My DD (9 at the time) painted pottery at the resort and swam with the dolphins at the Xcaret park next door.
