I'm a very light sleeper, and the lightning woke me up.
 
Good Morning. I hope everyone got through the night safe and sound. I have to say that I didn't hear anything last night. I went to sleep with the wind but no rain. It was raining when I woke up at 5:00 but it's not raining now. I'm not sure if that means the rain is over for Mandeville or if we are just having a break. Drive safe today.
 
So what are you ladies cooking for Easter? I need ideas...I usually cook a roast and the fixings. I need a good dessert to bring to my sisters. Is there any place on the WB where I can purchase a good pie or cake?

I'm doing a ham, pineapple bake, Ohana potatoes, curried sweet potatoes, corn casserole and a Pina Colada cake.

I slept through the night, didn't hear a thing. I hope everyone stayed safe.:goodvibes

Just heard on the news that there was a tornado in Marrero right off Barataria this morning. Praying that Sheryl & Stephanie weren't affected.:sad1:

Terry, Parrot Pete's has great looking cakes & a few pies. ( They come close to Whole Foods cakes.) Doberge, carrot cake, red velvet, black forest cakes & quite a few more. I've only tried the tiramisu but it was delicious! They also have chocolate cream, lemon meringue, key lime & great looking fruit tarts. You might have to order it ahead of time, so go check them out.

I will definately check out Parrot's Pete today.

Morning everyone. Boy that was some wind yesterday! We lost power twice for a total of nearly 3 hours. The one afternoon I try to plan ahead a make a crockpot roast.....needless to say it was turkey sandwiches for dinner instead. I slept through the worst of the rain overnight. How'd the rest of you fare? Sounds like there was some rough weather on the Westbank. Hope everyone's OK.

Easter menu? It's a big crawfish boil at DSis's for us as well. Still trying to figure out what to bring along. I was considering the Pina Colada cake, but last year it seemed like everyone else who brought dessert did something similar - creamy, pineapple, coconut. I'm thinking either cookies, brownies or an appetizer, but I really haven't made my mind up yet. We have to drive just over an hour, and we'll be outside most of the day, so I'd rather not bring anything that needs to be refrigerated.

Terry - the Pina Colada cake recipe should be posted on the What's for Dinner thread. The pineapple bake might be there as well.

Sheryl - How did the dr. visit go?
 
Unfortunately due to my being the lone employee at my credit union and the fact that we're now playing "District" baseball games my schedule doesn't look too good for a zoo meet. My only off day is a Monday.:sad2:

I tried to get Rick to let me come work for you but apparently I haven't hacked him off enough yet! He said nope- then he'd never get to see me!:lovestruc

But what would we do with the work with both of us DISing?;) :lmao:

Kathy, we're okay but it was really bad over here! The neighborhood is a mess! Garbage, garbage cans, branches everywhere. Half my landscape lights are missing.

Thanks for asking about the dr visit. Not quite what I hoped. He did say he feels strongly that I have fibromyalgia & not rheumatoid arthritis as he suspected 2 yrs ago. He said the fibro is caused by not sleeping well enough to get into rem sleep. Which allows your muscles to relax & the dopamine in your system to replenish. It also sets off a host of other problems, like the IBS I've been struggling with. What I'm not happy about is that he wants me to try using muscle relaxers to get into REM sleep. (instead of taking lunesta) I tried that the last visit with him & felt doped all the time. Well I tried it again last night, didn't fall asleep until about 11:30 & was up by 3:45. I got Bob off to work & then went back to bed, slept till 11 but slept really poorly. Woke up with my neck hurting even worse,a headache and just feel out of it. He insisted I go back to step one before considering other meds, such as lunestra & the new lyrica on the market. For that he charged 180 bucks & I have to go back in 3 weeks. :mad:

Here's the cake:

Pina Colada Cake

1 box white or yellow cake (whichever you prefer)
1 can sweetened condensed milk
1 can cream of coconut drink mix
1 can crushed pineapple (any size depending on how much you like pineapple) or leave it out if you don't like it
1 tub cool whip
shredded coconut

Cook the cake according to package directions in a 13x9 inch pan. While it's still hot, combine the cream of coconut and condensed milk in a bowl. Poke holes all through the cake and pour the mixture all over it.

Put the cake into the fridge and let it chill. When the cake is cold drain the crushed pineapple and spread it over the cake. Then top with the cool whip and sprinkle with coconut.

I hired someone just this afternoon. She had the job as soon as she told me she was a Disney phanatic! I'm going to refrain from introducing her to the DIS until after I get her trained.:rotfl2:

How about the warm winter lemon cake we've been talking about on the WFD thread. It is amazing served warm but still very good at room temp.

o Lord, don't feel bad about the cake thing-the campfire cake was not really home made-it was frozen pound cake doctored up with icing, gel and red and yellow fruit rollups. and the eeyore cake was falling on one side. I kept "gluing" it with icing!! I added almond to it b/c I LOVE that flavoring in a cake. The other cakes, esp the barbie one-well that one had to be transported to a Chck E Cheese type place that closed here a few years back called Looney Birds. The dress was threatening to melt off too. I have only made them to save the money and time of buying one. So as much as I have fun creating them, it stresses me out as much!! My kids ask for homemeade cakes instead of store bought ones. I think they like to see me sweat!!!:headache:

Yeah, the shaving thing has freaked us out. I am blaming it on chemo. The oncologist DID tell us to expect her to develop about a year earlier then what she would have normally due to all the steroids she has had. Like we would ahve known when she would have developed anyway. It seems sooo early and I have fought this as much as my budget has allowed with all natural Whole Foods meats and organic milk, eggs, butter,etc,etc... But Walmart is the closest grocery to me and we have no Whole Foods yet. THAT would BOOM over here.
Thankfully, Haley is will be way behind her-she is naturally tiny and has no clue about all that yet. :yay:

Sheryl - It's been either crawfish or a big BBQ (if the crawfish are not available or too $$$$) for the last several years running. We used to have the big boil on Good Friday, but several of us have work obligations now, so we just shifted it over to Easter.

Is your Dr. doing the 3-steps back shuffle because of insurance? I know some companies require that a certain protocol be followed once a diagnosis is made. Maybe that's the case here? I'd be frustrated too, however, knowing that you're essentially wasting 3 weeks on something that didn't work previously.

OOOOH! I didn't think about lemon! I've held onto that recipe - now might be the time to try it! I was considering the Derby Pie, but I did that one at Christmas and didn't really want a repeat. The Hello Dolly Pie was under consideration as well, but with all the chocolate the kids get, I wanted to go a different direction. Thanks! :idea:

And congrats on finding a worker! I've noticed lots of So. LA people on these boards, so I wouldn't be surprised to find out if your new employee already knows about the DIS addiction!

Kathy- Read about the frustration with Kyle's wreck on the WFD thread. Hope you don't mind my bringing it up here. I wish I knew of someone I could call to help you get it straightened out. Stuff like that really sets my blood to boil.

I hope everyone has a beautiful Easter weekend. Not sure how much time I'll have to pop in over the next few days.

Kathy, If you're around, have you made that pineapple baked dish? Is it good? I need a dish for teacher appreciation week at Alexis' school, and it's a hawaiin theme.

I guess I find the crawfish on Easter strange, because as a kid we always had big barbecues. My Paw-Paw was the Easter barbecuer, my Dad would always boil crawish on Good Friday. Since they've been gone, my brother & my uncle only offer to boil & since all the women would rather not have to cook, we'll take that!!!!;)

I guess the dr. instructions could be due to insurance. But I just felt like he was being stubborn. I took the muscle relaxer as he instructed last night, when I was still not sleepy at 12:30, I succumbed to taking 1/2 dose of lunesta. I slept well though, but I guess I'm still not getting the "right" kind of sleep? :confused3

And to the F&W goers - Remember how Oklahoma was there last year? Louisiana may be the state this year!! There was a short article in yesterday's money section of the T-P about negotiations that are taking place. I think that would be pretty neat!!

WHAT!! I didn't read the paper yesterday, I'll go dig it out of the bin right now!!! That would be too cool!:cool1: I love to see how Disney would highlight our state's food!

We're okay over here. I knew from the sound of the wind it was bad, Although I just found out how close that tornado hit! :scared1: Put trees through a couple of roofs very close to us. I guess I should have gotten Bob out of bed to hide in the hall, & I really shouldn't have been watching it standing by the window!
