Meatloaf

My mom makes her with breadcrumbs and tomato soup mixed in and on top. It’s really good and for some reason it’s become our Halloween night meal.
 
There ain't no way I'm ever gonna eat that.

What's wrong with meatloaf?? :confused3 I just made one yesterday - very well seasoned, with bread crumbs and oatmeal, topped with a blend of Ketchup/brown sugar/Parmesan cheese, and was delicious - no gravy though (well drained of grease).

It is the one thing I 'never' eat out though. I want to know exactly how it's made and all the ingredients. My dh also loves it in a sandwich.
 
Ketchup and honey mixed together, spread on top about 15 mins before done and served alongside in case anyone wants extra. Yummmm.
 

I think meatloaf is kinda like chili or pizza: You can make it a lot of different ways and most of 'em are pretty good. If you mess it up, it's a culinary crime. ;)
 
I've never heard of meatloaf with gravy on it - I've only ever had it with a tomato-based topping (usually ketchup, mustard, and some other things mixed together).

I like meatloaf, but only if I make it or my mom makes it. It always seems a little creepy to eat if it's made by someone else. ;)
 
We are in upstate NY and its all over the place when it comes to meatloaf here. My parents put BBQ sauce on it. My in-laws put marinara sauce on it. My brother-in-law's family puts ketchup on it. Most restaurants put gravy on it. So eat it however you like it! LOL!
 
My mom puts tomato sauce on it. I used to do that also but the last few years I try different things - more of a brown sugar/honey type glaze.
 
Mine has a sauce on it (ketchup/sugar based, with onions and worcestershire etc). I use oatmeal instead of breadcrumbs, though I like the other type, too.
 
Ewwww, no oatmeal, rice, or ritz crackers!!!!
And, no sweet Karo syrup or brown sugar.... I don't so sweet on my meat! (except some Asian)

I put a slice or two of bread in the blender and zap for a few second... Instant fresh breadcrumbs.
Mix those with some milk, and the other seasonings and add-in ingredients.
Lightly fold in and mix the meats...

We always had it with a tomato/ketchup on top... But, being from the South, I also love me some good gravy.

If gravy is giving anyone somebody stomach issues, and not agreeing with you, it is something in the gravy.
Gravy mixes (anything processed, powdered, etc...) can be notoriously toxic.
 
Growing up, my mother made meatloaf using instant minute rice as the binder. Gravy was the powdered kind from an envelope. I think it was this brand.

Then she discovered the recipe using Lipton onion soup mix. There's ketchup mixed in with the meat. That's how I still make it today. No gravy needed, it's moist enough.

That gravy packet looks like an early 80's video game cartridge for some reason. Also, is that the Swedish Chef? :laughing:
 
I use my stepmother’s recipe. Made with oatmeal, glaze with a mixture of ketchup, Lea & Perrins and a tbsp of tomato paste. No gravy. It’s best the next day on a sandwich.

I think that those that grew up with meatloaf and hate it simply had bad meatloaf. It reminds me of people who hate fish simply because they grew up in a family that didn’t know how to buy or cook fish properly.

I make mine with a ketchup and yellow mustard glaze. Not opposed to some gravy if it’s available.
Agreed. My best friend proclaims to hate meatloaf but if I call him and tell him I’m making “my” meatloaf he’ll be over here before it comes out of the oven. You have to use decent quality meat with a little fat in it, put things in it that will keep it moist and for all that is holy don’t over cook it.
 
I make Italian meatloaf. It’s ground beef, spices, egg breadcrumbs etc. but I spread it out and put mozzarella in the middle and roll it up. Then before it’s done I put sauce and more mozzarella on top. I’m not sure that I could actually eat “regular” meatloaf
This is how I make meatloaf too, but mine has a glaze on top that is ketchup, brown sugar and minced garlic.
 
My glaze is a little ketchup, a little brown sugar, sweet and spicy BBQ sauce, red chili flakes, minced garlic, spices, Worcestershire sauce, and hot chili oil.
