Meatloaf


I love meatloaf. My mother topped it with a ketchup-brown sugar mix about 20 minutes before it finished baking, and it's so good! Here's a question: Do you use bread crumbs, oatmeal, or something else in your meatloaf (like milk-soaked bread). I use bread crumbs, but my MIL uses oatmeal.
 
I grew up eating it with ketchup on top. I haven't made it in a long time, but we use bread slices soaked in milk (though I no longer drink milk, so don't know what I'd use now)
 
I grew up with the ketchup on the top and would never have gravy on it b/c I'm not a huge gravy fan/stomach doesn't agree with it.

I've recently started making mine with ground up garlic croutons in the place of bread crumbs and it's really good and with the "simply heinz ketchup" that doesn't have HFC etc in it about 10 mins before done baking. It's very tasty!
 
I put a glaze over it of ketchup mixed with white Karo syrup.
 
I grew up with ketchup baked on top. My family prefers plain. No ketchup or gravy so I make it that way.
 
Growing up, my mother made meatloaf using instant minute rice as the binder. Gravy was the powdered kind from an envelope. I think it was this brand.

Then she discovered the recipe using Lipton onion soup mix. There's ketchup mixed in with the meat. That's how I still make it today. No gravy needed, it's moist enough.
 
Depends on the mood. I like both, but gravy edges out tomato sauce as tomato sauces now sometimes leave me with heartburn.
 
I use ketchup, and I use bread inside. But you could make gravy on the side and put it on the meatloaf.
 
Sometimes I do the ketchup version, but I usually make "polpetonne farcito" with hard boiled eggs in the middle (but I usually skip the pancetta, too spendy).
 
A good meatloaf I tend to eat as is. I have had it hot with gravy though too, when served that way. Never hot meatloaf with ketchup, unless it was part of the sauce or mix. But cold is when I do like ketchup on it.

Breadcrumbs! (Must be a Beantown thing! :goodvibes )

Plain on top, too, but served HOT with ketchup! :laughing:
 
My mom used to make it with ketchup on top, I haven't made it in a couple years but I do a layer of fresh cracked black pepper on top and serve ketchup on the side.

Have always used breadcrumbs, never heard of oatmeal in meatloaf actually.
 
I mix ketchup, brown sugar and powdered ginger and glaze it heavily before I bake it. We either eat it plain or sometimes with ketchup.

I put seasoned breadcrumbs in mine.
