Meatloaf

Bummer... I thought this a thread about the singer Meatloaf. I met him at a golf fundraiser and was so excited!!! He was playing golf with Dan Jansen ( Olympic speed skater). I gave Meatloaf a big welcome while I was working the tournament. I politely said hello to Dan and you could just tell he was peeved that he didn’t get the same reception.:rotfl:

I like my meatloaf any way you slice it!

I saw the thread title and immediately thought he had died :/ Glad to read it was only about the edible kind of meatloaf.
 

I am deep south but never had gravy on meatloaf - nor did I know anyone that did. I do love gravy on rice though! :)
I could be wrong but as a northerner I thought that southerners liked gravy on pretty much everything. Not that that there is anything wrong with that as I follow the same.

No, not us, or anyone we were around. Yes, we do love our gravy, but for the most part on rice or potatoes.
 
I put ketchup mixed with brown sugar and dry mustard on top of meatloaf. I mix mine with bread.

That's what I do. I've found that leftover hot dog or hamburger buns make a great binder for meatloaf or meatballs. When the meatloaf is almost ready I put shredded cheddar cheese on top and melt it in the oven.

I grew up in the south (North Carolina). We ate gravy on turkey, chicken fried steak, hamburger steak, beef tips & biscuits. The gravy wasn't the same for all of them. My DH reminded me we also ate gravy on mashed potatoes, but that was only a KFC takeout thing, which we rarely had in my youth. (You can tell his family ate out more than mine did. :laughing:) To say something is popular in the south is a misnomer. Different areas of the south eat very different cuisines. For example, where I'm from, we ate what would be considered country cooking. It's more of a southern, east coast cuisine. Our cuisine was different from what you would typically find in Mississippi, Louisiana or Texas. We didn't eat hot spices. People from VA ate more similarly to the way we ate than people in the deep south. From my experience, food in South Carolina & Georgia is similar to NC. Naturally, ancestral influences can make a difference. For example, my maternal grandparents were German, so we ate more pickled food than my friends did. I excluded Florida, because it's such a melting pot that you will find pretty much any type of food here.
 
My grandma would make it with ketchup on top. I loved her meatloaf! I have no idea how she made it, but I loved it. But that is one food my mother refused to make. My dad made me his once and it made me gag. He put Kraft cheese slices on top, then ketchup on top of that. He also made it with crackers instead of bread crumbs. Ick. I make mine with Stove Top Stuffing and barbecue sauce. DD15 and I love it, DH seems to like it, he’s never complained. I gave the recipe to my sister once and she absolutely hated it. It’s an acquired taste apparently;)
 
Ketchup to bake it, gravy to eat it because I love it with mashed potatoes. And I make mine with Stove Top and beefy onion soup mix, an egg or two.
 
Well, that depends. Ketchup never graces my plate but I do put a ketchup and brown sugar mixture on top of the meatloaf the rest of the family eats. Normally though I make turkey meatloaf and their portion still gets the ketchup treatment but I do make country gravy to go with it and the mashed potatoes.

After that DD12 and I get into our standard argument about why on earth she loves my turkey meatloaf but won't touch my turkey burgers given that they are the exact same recipe. She insists it's different. The only difference is the shape and the cooking method. I pan fry the burgers and bake the meatloaf. I told her next time I make turkey burgers I'm going to put hers in the oven and bake them and see what she has to say then.

Kids these days...I swear.
 
How much of the ketchup glaze do people put on? I used to eat it like this, but for a long time had to stay 100% away from anything with tomato in or on it. Now I can have it again, but only in smaller amounts (think like on a burger or to dip some fries in). I have been CRAVING meatloaf like my mom made (with some sort of ketchup glaze on top) but I have no idea how to make it or how much it used (and this if i can have it).
 
I usually use dried breadcrumbs and a sweet and sour glaze. (I was never a gravy fan.) Sometimes, I use Stonewall Kitchen's "Country Ketchup" instead. (It's a little chunkier and spicier than regular ketchup.)

If I make it with turkey instead of beef, I use avocado or guacamole to add back some fat.
 
Ewwww, no oatmeal, rice, or ritz crackers!!!!
And, no sweet Karo syrup or brown sugar.... I don't so sweet on my meat! (except some Asian)

I put a slice or two of bread in the blender and zap for a few second... Instant fresh breadcrumbs.
Mix those with some milk, and the other seasonings and add-in ingredients.
Lightly fold in and mix the meats...

We always had it with a tomato/ketchup on top... But, being from the South, I also love me some good gravy.

If gravy is giving anyone somebody stomach issues, and not agreeing with you, it is something in the gravy.
Gravy mixes (anything processed, powdered, etc...) can be notoriously toxic.

I have done it with bread crumbs and with oatmeal. 0 difference in taste, actually. The oatmeal seems to bind better. I have also tried the bread soaked in milk, dh didn’t like it.




I am from the south. I have never had gravy on meatloaf. But I do love gravy though! Brown gravy, white gravy, tomato gravy. Usually make it from the grease I fry the meat in (pork chops or chicken), or the juices of the meat (beef or pork roast) or with white gravy or tomato gravy from just a roux and whatever else. Meatloaf just doesn’t lend itself to make gravy from, IMO.
 
Bacon wrapped around the loaf, ketchup on top before cooking. Served with ketchup.

For binders I've used pretty much anything that works to absorb excess liquid - oatmeal, bread crumbs, cracker crumbs, corn flakes. I've used rice on occasion.

I make the 50s Prime Time Café Meatloaf. Google the recipe - it has a ketchup glaze on top.

I'm actually making this tomorrow and we're going to put it in the smoker. It's really good smoked!
