Meatloaf

Haven’t made it in awhile but make it from a recipe from a restaurant where I used to work.

I add onions, bell pepper, garlic, oatmeal, egg and half a can of tomato sauce to the meat. Then on top, I mix the rest of the tomato sauce, brown sugar, ketchup and any minced onions and bell pepper left over from what I added to the meat. Then bake. Always moist and always good.
 
Homemade meatloaf to me always has ketchup on top.

Restaurants always seem to have gravy.

Both are delicious.
 

When I bake it, I spread a little barbecue sauce over it.

When cooked before eating, I spread a very thin layer of mayo and then a thin layer of ketchup.
 
I hate meatloaf. I have no idea what my mother did to it to make it so nasty but I will never, ever try meatloaf again. I will go hungry before eating it again.

Actually it's a miracle I have ever eaten burgers again. My Mother is a horrible cook. But I figured no one will ever make burgers as bad as hers are and I've been right. LOL
 
Growing up, my mother made meatloaf using instant minute rice as the binder. Gravy was the powdered kind from an envelope. I think it was this brand.

Then she discovered the recipe using Lipton onion soup mix. There's ketchup mixed in with the meat. That's how I still make it today. No gravy needed, it's moist enough.

I think that those that grew up with meatloaf and hate it simply had bad meatloaf. It reminds me of people who hate fish simply because they grew up in a family that didn’t know how to buy or cook fish properly.

I make mine with a ketchup and yellow mustard glaze. Not opposed to some gravy if it’s available.
 
I make mine with a ketchup/brown sugar/ ground mustard glaze and use bread crumbs as the binder.

My mom always used cornflakes.
 
My mom used to make hers with hamburger, onion, egg, saltine crackers soaked in water and spices. She would put stewed tomatoes on top during the baking. If it was served as a hot dinner with mashed potatoes I would scrape off the tomatoes and put gravy on it. Leftovers as a cold meatloaf sandwich got ketchup. I make it the same way.
 
I make mine in the crockpot and top it with either barbecue sauce or tomato sauce while it cooks. I use ground turkey and need something to keep it moist.
 
I use a ketchup, brown sugar and either mustard or A1 mixed glaze. The recipe I usually make uses cooked quinoa as the binder and I like it but it ends up more as a jumble than a true loaf.
 
I make it by mixing together (with my fingers) ground chuck, couple of eggs, and crushed Ritz crackers. Make it in a loaf shape, in a pan obviously, with ketsup on top. Sometimes put more ketsup on it after it’s done baking. Sometimes I put chopped onions in it if I think to buy the onion.
 
The only time we had gravy growing up was with turkey at Thanksgiving, and sometimes a white milky gravy with fried chicken. Beef usually had more of a brothy sauce rather than gravy unless it was thickened for stew.

I like gravy, but it would never occur to me to make it with meatloaf. We use a glaze and put the bottle of ketchup on the table in case someone wants it.

How do you make gravy to go with meatloaf? Do you use the hamburger grease?
 
I make Italian meatloaf. It’s ground beef, spices, egg breadcrumbs etc. but I spread it out and put mozzarella in the middle and roll it up. Then before it’s done I put sauce and more mozzarella on top. I’m not sure that I could actually eat “regular” meatloaf
 
Plain! My mom always put the ketchup on top and baked it. My DH doesn't like ketchup hence the plain. I put ketchup on mine.

I mix ground beef, ground pork, oats, bread crumbs, granulated garlic, 2 eggs, italian seasoning, onions (when I'm lazy dried onions), chopped green peppers (or not if I'm lazy) squirt some ketchup in and mix it all up with my hands. Form into loaves put in a 9x13 pan, up on a rack, cause i hate the grease, and bake.
