Meatloaf Makers: What's the secret?

Along with the egg, oatmeal, worcestershire sauce, grated carrot, mushroom soup, a little liquid smoke, etc., I add a couple of tablespoons of horseradish, to kick up the flavour a notch or two. :)

I put some ketchup and parsley in the bottom of the pan, so when I turn it out on a platter, it's on top, and looks good. Sometimes I add strips of lightly fried bacon to the top, before I pop it in the oven.
 
Hunts puts out a can of meatloaf mixture and it is without a doubt close to my mother in laws.......

I grew up eating this meatloaf. My mom always made it this way with no eggs or breadcrumbs. It's yummy.

1 lb sausage (I like the sage variety)
1 or 1 1/2 lbs. ground beef
1 can evaporated milk (can use evaporated skim)
some instant rice
tomato sauce on top if desired, but I usually leave it off

Mix the first three ingredients well and then add some rice until it has some body (maybe a cup or two? I never measure it). Put in a loaf pan or other baking dish. Make a well around the edges so the grease can run off. Bake at 350 until done. I like it a little crusty and brown on top. Great the next day sliced thin on sandwiches.
 
I found this online a while ago, but the page has been removed. I can't resist sharing this as it is by far the best meatloaf I've ever had (and I wasn't really a big fan of meatloaf). I made this for my parents and my brother and they all wanted the recipe. Within a week, they were making it at home because they liked it so much.

1 can tomato sauce
2 T cider vinegar
1/2 t pepper
1/2 t garlic powder
1/2 t oregano
1/4 t salt
2 lbs ground beef
3/4 C dry bread crumbs (I use italian)
1 medium onion chopped (I saute my onion for more mild flavor)
1 egg

Mix tomato sauce, vinegar, pepper, garlic, oregano, and salt in a bowl. In a large bowl, mix beef, bread crumbs, 1/2 of the sauce mixture, egg, and onion until blended. Invert a 6 ounce custard cup in the center of a round shallow 2 quart baking dish. Put meat in dish, pour remaining sauce mixture on top. Cover with waxed paper. Microwave on high 10-12 minutes (mine takes about 14), rotating after 5 minutes. Let stand 5 minutes.

My meatloaf has breadcrumbs, eggs, milk, onion, salt, pepper, parmesan cheese, and parsley.
 
My secret ingredient is 2 packets of Tomato "Cup of Soup". Plus I add garlic powder, breadcrumbs and eggs.
 
This recipe is Ann Landers' Meatloaf

2 lbs. ground round
2 eggs
1 1/2 cup bread crumbs
3/4 cup ketchup
1 tsp. Accent
1/2 cup warm water
1 pkg. Lipton's onion soup mix

topping
8 oz. can tomato sauce

My recipe is similar to a lot of those mentioned. However, I mix ketchup with kayro syrup and pour it on top to bake the last 15 minutes. It makes a great topping!
 
My favorite meatloaf is the Ann Landers' recipe that Lori mentioned above. Simple , but good.
 
eeks, my recipe is pretty close to Ann Landers, minus the Accent and, I just got mine off the Lipton dry soup box. And, like Snowwark (she stole my only 'idea' to add), I put strips of bacon on top, yummmmm. ::yes::
 
Ground beef, onions (the more the better), bell pepper if I have it, bread crumbs (oatmeal if I am out of bread crumbs), squirt of mustard, large squirt of ketchup, steak sauce (archies), kraft bar b q sauce, Dreamland bar b q sauce for kick, egg. mix up and then flatten out in pan and spread bar b q sauce on top to bake. Once again the best thing about meatloaf is the meatloaf sandwiches the next day.

I make my meatloaf the same way, it's always been a big hit with anyone who tries it, I found the recipe in a cookbook over 20 years ago...they called it Sicilian Meatroll
 
Literally.

A friend gave me a recipe for meatloaf where you put half the meat in the bbottom of a loaf pan, then put in a layer of fried onions and mushrooms mixed with sourcream, than topped with the meat. Dang it was good!!! Sigh.

But that was when I stopped with the bread and started using oatmeal. My mom did the white bread routine, and those chunks of bread are as bad as those chunks of onion!

I'll make meatloaf every so often just for the sandwiches!! My favorite.
 
No one in my family likes tomato sauce or paste in their meatloaf so I came up with this recipe which we all like
1 lb ground chuck
1 pkg brown gravy mix
1 egg
2 cups bread crumbs ( I use the heels of whatever loaf bread I have)
1/2 cup chopped onion
1/2 cup milk
It is almost mushy when I put it in the oven, but it assures that it will never be dry. I can't stand dry meatloaf:D
 
I've used the Quaker Oatmeal one for YEARS now and found it to be the most consistent and best tasting --

The two things I do differently is I use V-8 JUICE instead of the tomato sauce/catsup/bbq sauce AND I used ground round and ground pork mixed.

And, I just use the dried onions instead of chopped onions so my DD doesn't pick them out!

My Meatloaf

1 lb 93 % Ground Beef
1 Egg
3 slices of cheese 2 torn 1 just folded in half
1 Cup white rice
1 Sllice of Bread torn in small shreds
Healthy Shakes of Garlic Salt, Onion Powder, and Pepper
Healthy Squirt of Katsup

Mix all ingredients in a large bowl - put into Loaf Pan - lay the folded cheese on top give one more squirt of katsup and bake for 1 hour on 350 .

I saute some onions, celery and carrots in butter until they are soft. Put those on the 3 meat mixture with 2 eggs and 1/2 can of cream of mushroom soup and a bit of breadcrumbs. Mix this together and form into a loaf. Then take 1-1/2 cans of cream of mushroom soup and 1/2 can of milk and mix them together before pouring them over the loaf of meat.

You can make this in the oven or in a crock pot.

Either way, it is very delicious!

I do the “yodel” thing, too. I called it “stuffed meatloaf” and use spinach with bits of fresh garlic and cheddar cheese in the stuffing.

I make the meat mixture with the ground meat combo (beef, veal and pork), eggs (one egg per pound of meat), seasoned breadcrumbs, chopped onion, worchestershire sauce, cut-up fresh garlic, salt and pepper. Then I flatten it out in a foil-lined pan. (I cut the foil so it overlaps quite a bit, which makes it easier to roll up.) Then I sprinkle it with thawed and drained chopped spinach, some garlic, and salt and pepper, then diced cheddar cheese.

I usually make it the night before, then bake it the next day in a foil-lined pan (to catch the melted cheese). I don’t like ketchup much at all, so I make an envelope of Knorr’s brown or peppercorn gravy to serve with it. Also, I always make baked potatoes with it because the oven is on anyway, and they’re so easy.
 
I mentioned this here a while ago saying I couldnt find my key ingredient anymore. Thanks to Wagamama:wave: finding it on line, Ive been able to make my meatloaf again.
Anyway, the secret ingredient is...Parm Plus, garlic & herb variety. I originally got the recipe off that jar and made it for years until I couldnt find it anymore. I consider this more of an Italian meatloaf(reminds me of a big meatball), and I serve it with pasta and garlic bread. Not your traditional meatloaf, but its soooo good.
