ME and Split Stays

In August, staying 5 night at AKL then transferring to AoA for one more night.

How do I book ME? Do it once for each resort?

Also, when and where will I get my departure time/paper?

When you call give them the reservation number for the first resort and set up a one way for DME.
Then give them the other reservation number for the last resort and set up DME. You will receive your DME papers on your resort door the day before you leave. You DME pick up time should be 3 hours before your flight departs.

Suggest waiting until you get there to make the Magical Express reservation back to the airport. Best time is when you get to the second resort.
