Can you still use EMH or EEH on the day that you check-out? Or will your resort key be invalid? We are leaving on-site to off-site resort. If checking out on a Friday, can we do EMH on Friday morning?

You have all resort benefits on your checkout day until midnight.

For anyone worried that Intercot's EMHs are incorrect, I can verify that they are indeed correct. I called WDW last night and talked to a very nice CM who gave me the complete EMH schedule for May, and it is exactly as the OP posted.
Now for all the PS re-arranging....
