Having just read through a bunch of posts on another disney board, I have come to the conclusion that our POTC night will be the third night of sailing, an at-sea day, Monday the 30th. I'd like to have confirmation of this of course, but right now I'm putting my money on Monday.
www.intercot.com is the other board I read sometimes, although they're not nearly as active as we are, sometimes nuggets sneak through.

Rebecca,
I've been trying to get some idea of what we can expect, too. I lean more toward our cruise being similar in scheduling to the Eastern Caribbean nights. They have as many days at sea as we do and only the end of the week is slightly different, since we have 3 ports of call in 3 consecutive days and we have no stop at a private island like
Castaway Cay the last day.
My guess is different from yours, although anybody's guess is good for now. My own thinking is we will have formal night on Monday, like the Eastern Caribbean cruise has. Captain's Gala will remain for Thursday, even though that is a port day at Cabo San Lucas.
Technically, we are not going to be getting a clue on what to expect until we see our Navigator daily guides onboard. However, I've come up with a guess, based on the Eastern Caribbean itinerary and the port times I see on our docs we got this last week.
Warning: the following is pure speculation! My guess only.
Saturday, May 28, set sail at 4:00. Welcome Aboard Show. Dinner casual, regular fare at rotation restaurant.
Sunday May 29, first day at sea. That night possible new show of Twice Charmed, dinner casual, regular fare at rotation restaurant.
Monday May 30, second day at sea. That night Formal?, showing of Golden Mickeys maybe, regular fare at third rotation restaurant.
Tuesday May 31, Port of Call Puerto Vallarta 8:00 a.m. to 9:45 p.m. Possible special theme night of Pirate or Mexicalifragilistic. First theme night menu in rotational restaurant, all restaurants serving the same menu. Dress would be casual. This could be either special movie night for the show or Who Wants to be a Mouseketeer night in the Walt Disney Theater.
Wednesday June 1, Port of Call Mazatlan 8:00 a.m. to 8:00 p.m. If Who Wants to be a Mouseketeer wasn't last night, likely it will be tonight. Theme menu could be "Small World" featuring selections from international cuisine, dress casual.
Thursday June 2, Port of Call Cabo San Lucas 7:30 a.m. to 3:30 p.m. Captain's Gala night with the lobster special. Dress is semi-formal. Disney Dreams is the show.
Friday June 3, last day at sea. Traditional farewell dinner, dress casual, baked alaska on parade. Farewell show in the Walt Disney Theater.
THE ABOVE IS ONLY MY GUESS BASED ON THE EASTERN CARIBBEAN SCHEDULE. WE JUST DON'T KNOW YET.
Still there are those of us who are obsessive planners. I'm always willing to make guesses so that I can plan Spa treatments and Palo night and brunch. My guess is based on the fact that the ship runs like a well oiled machine and I don't expect the machine to turn over that drastically for this new itinerary. In order for it to run well, there has to be some familiarity and repeat events.
I do think we could get some nice surprises in the way of souvenirs available for purchase, maybe a new menu item. Maybe even a surprise theme night. However, so many things will run the same so as to run smoothly. That's why I'm banking on the schedule above to plan my own events. I'm sharing this only because we are all having fun speculating what to expect. This is just another guess, no better or worse than any others.
We will all know for sure in 5 weeks!
