Macaroni and Cheese.

We had a company event last week in which teams competed with food preparation and presentation as a fund raiser for the United Way. I had the BEST Mac and Cheese that I have ever had. It has elbow macaroni, half and half, sharp yellow chedder, extra sharp white chedder, mozzarella, asiago, monterey jack, muenster, velveeta, butter, eggs, salt pepper, Emerils seasoning, tabasco, worcestershire sauce and breadcrumbs. I spent $27 on just the cheeses, eggs and would you believe low carb macaroni. I think I will cook a little of the macaroni first to see if its okay. I would hate to waste all that cheese. Has anyone had this kind of mac and cheese?
 
No...but I'd love the recipe! I'm drooling just thinking about it! I love cheese!!

How much of each of those cheeses go into it? How many does it serve?

Aside from the half and half and I use hot sauce instead of Emeril's, that's how I make mine.

a local deli sells pre-grated packages of a mixture of all those cheese. I just add in the velveeta myself
 
yes, share the recipe. I love Martha Stewart's mac n cheese. It's made with sharp white cheddar and romano cheese, topped with breadcrumbs. I'll have to try yours.
 

What kind of low carb pasta are you using? I've been buying Dreamfields and even my non-carb concious family likes it!
 
That sounds like the Patti LaBelle recipe that she made on Oprah. I think it was called "Over the Rainbow Macaroni and Cheese". If anyone wants the recipe I'd be happy to post it.
 
2 lbs of elbos mac.
1 1/2 qts of half and half
3 cups of sharp yellow cheddar
2 cups of extra-sharp white cheddar
1 1/2 Cups of mozzarella
1 cup asiago cheese
1 cup monterey jack
1 cup muenster cheese
1 cup velveeta cheese
1/2 lb butter
1 dozen eggs
1 pinch sale
1/2 teas of Emeri's seasoning
2 tbsp of black pepper
dash of tabasco sauce
dash of Worcetershire sauce
Breadcrumbs to top

cook mac as directed. melt butter. beat eggs until blended
grate all cheeses except velveeta. With the cooked elbow mac still warm, mix in the Velveeta cheese, melted butter and 1/2 quart of half and half
Blend until creamy and smooth.
Add the remaining half and half, all the grated cheeses, eggs, salt and peper. Blend all ingreadients until smooth and creamy
sprinkle top with crumbs. Bake in a baking dish with deep sides at 325 for 1 hour until golden brown. May sure all ingredients are mixed well and your oven has been rpeheated. 12 to 16 servings.

I bought Dreamfields. I was going to cook a little and try it before I ruined all of those cheeses. Does it taste much different? I usually avoid pasta altogether but I can't resist trying this recipe.
 
I make a Mac and cheese from the (original) Patti LaBelle cookbook that calls for 5 types of cheeses along with a stick of butter and at least a cup of Half and Half. I make it every other year or so when we are really splurging (fat/calories, not $$). Your recipe has some different cheeses than Patti's calls for. Would love to have it if you care to share.

It doesn't taste much different at all. It was hard for me to believe it was low carb, but apparently it is. Sometimes it's hard for me to find in our grocery store--when I do, I buy a bunch.

Hi Karen, I tried it plain and I can't tell the difference. The Mac and Cheese is baking now. I think I will have a week's worth of lunches for work. :)

I'd love to try this, but I don't know what everything in the recipe is! Would someone tell me what half and half is? Also, could you tell me what sort of cheeses asiago, monterey jack, muenster & velveeta are? And lastly, what is Emeri's seasoning?

I'm sure there's a European equivalent to all of the above, but would appreciate a description so I can get them!

Velveeta is a processed, American type cheese. I think it is used because it melts quickly. asiago is more like Romano or Parmasean cheese, kind of a hard Italian cheese. muenster is bland and you could probably live without it. Monterey jack is like cheddar sort of, but milder. Emerils you could omit. You won't miss it. Good luck

I think this would be great using a white sauce instead of the eggs. IMHO eggs in baked mac and cheese is awful. :)

I detest eggs.
 
DD2Disney, The deli is in Plainville, MA. They get the cheese from the Village Cheese Shoppe in Foxboro :)

But in a pinch, Stop & Shop has gourmet and Italian blend cheeses (I think it's either the Stop& Shop brand or Sargento) in the packaged cheese section
