When we were at the Polynesian last week DS7 and I went exploring and checked in on the Luau Cove around 4 in the afternoon. There were a couple of CMs and several others who may be performers standing on the stage.
The CMs came over and I told them we were just exploring. They said the Luau was cancelled that evening because of the weather. It was a cool day and would have been in the 40s at showtime, but there was no rain or high winds in the forecast.
This leads me to believe that cancellation of the Luau is quite common in Dec and Jan. If they cancel it for temperatures in the 40s, they didn't do very many shows during our 9-day stay!
