Looking for easy appetizers

I need to come up with some easy appetizers for a function I am going to and would love to hear your suggestions. I would especially like some that contain shrimp, but will take any and all you have to suggest.

Is there a place in Italy where you can get some of the tiny quiches? Iin my area, Sam's Club is a good place to get them.
 
I don't know if you can get it there, but if you take Pillsbury Crescent rolls and cut them into pieces, or shapes, if you want to really get creative, you can bake them with gouda cheese. OMG!!! Yummy!

We had a cocktail party on Saturday night before my DH's class reunion. All I served was a variety of cheeses. We are lucky to have a deli that makes marinated mozzerella knots and fresh mozzerella rolled with proscuitto or red peppers or sun-dried tomatoes. I've also done this with marinated artichoke hearts, roasted peppers and marinated mushrooms as an appetizer.

OK, these would be, of course for finger foods moreso than as a true appetizer that would be served sitdown before a dinner party.

Which are you looking for? I've got some other ideas if it's a pre-dinner appetizer.
 
Easy Shrimp Appetizer

Serves 2 - 4

2 lbs. Medium or Large Shrimp, peeled and deveined
Wishbone Italian salad dressing
Assorted Veggie Sticks, Melon Balls, etc...


1. Boil the Shrimp in plain water, and peel as soon as you can touch them.

2. While still very warm, place the Shrimp in glass baking dish and pour Wishbone Italian salad dressing over them.

3. Cover and refrigerate, preferably overnight.

4. Serve skewered with melon balls, fresh veggie sticks and dips, etc...


Note: You may add salt in boiling water, but the dressing usually is all you need.



Shrimp and Bacon Bites

24 appetizers


24 Large Shrimp; cooked, peeled, and deveined
1/2 clove garlic, slivered
1/2 cup chili sauce
12 slices bacon


1. Mix Shrimp and garlic. Pour chili sauce on mixture. Cover and refrigerate, stirring occasionally, at least 2 hours.

2. Cut bacon slices into halves. Fry bacon until partially cooked. Wrap each Shrimp in bacon piece and use wooden picks to keep the bacon on the Shrimp.

3. Broil with tops 2 to 3 inches from heat until bacon is crisp. Serve immediately.



Tangy Shrimp Cocktail


2 Servings


1 lb Medium or Large Shrimp, peeled and deveined
1/4 cup Chili sauce
1/4 cup Lime juice
1 1/2 tsp Tabasco hot sauce
1/2 cup Chopped tomato
1/4 cup Spanish onion
2 Avacados, chopped


1. Steam the shrimp until cooked.

2. Mix all the ingredients except the avacados and Lime wedges, and refrigerate for 2 hours.

3. Add the cold avacados and mix with the steamed shrimp.

4. Garnish with the lime wedges.

Here is what you need...not sure if you can get everything in Italy...

2 1/2 pounds of frozen meatballs (I use the ones from Gordon's)
1 jar Heinz Chilli Sauce ( I highly rccomend Heinz)
1 can of cranberry sauce (anykind will do)
2 T. Brown Sugar
1 T. Lemon juice

Mix chili sauce and cranberry sauce over low heat untul disolved and not chunky. Add brown sugar and lemon juice. Pour sauce over meatballs in a baking dish and stir meatballs so that they are coated with the sauce. Bake in 350 oven to heated all the way through...about 25 - 30 minutes. Enjoy!!!

I make this all the time as it is always requested!! It is super simple (if you live in the states or can get the ingredients) and always a winner!!!! I made 4 batches for a halloween party we went to, and have been asked to bring them again for the Christmas party!!! I love this easy recipe!!!!
 
My favorite is to take a brick of cream cheese and put it on a pretty dish and allow it to soften a bit. Take some small, cooked shrimp and press it into the top of the cheese. Cover it with cocktail sauce. Sprinkle on more shrimp and serve with crackers. You can do the same thing with crab or fake crab. For crackers I prefer triscuits, they hold up better. To make homemade coctail sauce put some catsup in a bowl, add horseradish to taste, then a little lemon juice. Allow it to sit for 20 minutes or so and then taste it again to see if you need to adjust the flavor balance.
 
My DH loves this one for a chicken spread:

1 can of chunk chicken
1 8 o.z. cream cheese
1 Tbsp. of Mayo
1 Tbsp. of Soy Sauce

Mix together and serve w/ crackers. Yum!

A variation of this and equally as good is to just take --

1 jar Heinz Chili Sauce & 1 jar of apricot preserves

Mix together and pour over cooked meatballs (homemade or frozen ones)

This is also good over rice for a nice meal for dinner.
 
And still another variation of the meatball sauce -- a bottle of chili sauce and a jar of grape jelly. It tastes like it has a bunch of ingredients instead of just two.

Another really good easy one is to take a block of cream cheese and drizzle pepper jelly on top, then surround it with crackers, and you're finished. Since pepper jelly comes in red and green, it's really easy to make this a Christmas dish, too.
