Looking for a savory breakfast casserole....

Saturday morning at around 10:45 am two other families are coming over for a casual brunch. There will be 3 younger kids, 3 preteens and 6 adults including us. I don't have a lot of time to cook or bake so I plan to serve croissants from Costco with butter, honey and jam, fresh fruits, an assortment of cheeses, sausage rolls (DS11 will make them from breakfast sausages, Pillsbury crescent rolls, and cheese), and a savory breakfast casserole. If I have time I plan to purchase a coffee cake from Corner Bakery.

I'd like to make the casserole tomorrow night and put it in the oven Saturday morning. Does anyone have a good recipe? It's been a long time since I hosted brunch. In the past, I'd make waffles and omelets but I don't have the time or energy this time around.

I thought I'd ask since I got such great help when I asked for cookie recipes.
 
What about a nice quiche maybe spinach and tomato? If you are having sausage rolls, I wouldn't make a big heavy breakfast casserole with more sausage and grease.

ETA: you can do a built your own omelet bar with some toppings and already mixed eggs. Pour half cup (maybe quarter cup) of egg mixture in a Ziploc bag with toppings and put into a big batch of boiling water. You can do several at time in a big pot.
 
I'm not opposed to a good quiche recipe as long as it calls for premade pie crusts. My only concern with quiche is that I'm not sure if how picky the other 5 and 7-year-old are. I know DS7 eats quiche. As for the sausage rolls, they aren't greasy at all. They're made with cocktail sausages.
 
I'm sorry. I wasn't trying to be ugly. I am used to different sausage roll. Anyways, I make breakfast casserole that has a shredded hash brown crust and then eggs, milk and cooked meats mixed and topped with cheese. I'm sure there are people with real recipes. I just throw everything together

I make this every Christmas...
1 lb cooked bacon or sausage
1/2 onion (cooked with meat)
8 eggs
1 cup milk
1 tsp dry mustard
1/2 tsp salt
1 bag frozen shredded hashbrowns
2 cups shredded cheddar cheese

Whisk eggs, milk, salt and mustard together.

In a 9x13 pan break up frozen hashbrowns in the bottom. Placed cooked meat on top of potatoes. Pour egg mixture over meat and potatoes. Cover with cheese.

Cover and refrigerate overnight.

In the morning, bake at 350 for 60-70 minutes (depending on your oven)

I make a great casserole with broken up pieces of stale french bread (without crusts). Not fond of the hash brown based ones. Just google the recipe - has been a winner with us for years. Made the night before.
 
Start with a sprayed 9 x 11 cake pan, and some stale bread. (I like unsliced Italian). Cube the bread (1” to 1 1/2”). Spread in single layer in bottom of pan.

Choose your diced additions (as you would pizza toppings): ham, bacon, sausage, peppers, onions, mushrooms, seasonings, spices, and sprinkle over the top of the bread. The beauty of it is you can keep unpopular items to one end, and they won’t migrate to the rest of the dish!

(Herbs are great: sweet marjoram, thyme, rosemary, oregano, or basil.)

Choose your shredded cheese: Swiss, cheddar, American, etc. Sprinkle over the dish. At this point, you can tap the pan gently to make it all settle.

Beat 6-8 eggs with 1 1/2 cups of milk. Pour egg mix evenly over the contents of the baking dish. Cover with plastic wrap and refrigerate overnight.

Next morning, bake at 350* for 35-45 minutes (or until done in center).
 
Our go to is the hashbrown casseroles. Our recipe is very similar to the ones mentioned above. Our family is not big on "wet bread" so the casseroles with bread is out for us. LOL.
 
I don't know how to do a link, but the one I've made several times is on the foodandwine site, recipe from Bryan Voltaggio. It's called Christmas Morning Casserole. Very savory and very delicious!

Editing to add that the recipe specifically calls for preparing this the night before.

I do a tater tot breakfast casserole with cheese, eggs, bacon, & sausage. If you do a google search, it’ll be the first one that comes up.
