Do you have Mr Dell's where you're from? The blue bag of frozen hash browns has a recipe for cheesey pototoes on it. I've changed it up a bit:
16 oz sour cream
6 T margarine - melted
1 reg can cream of CHICKEN soup
2-3 cups shredded cheese - I usually use colby-jack or cheddar
a little onion powder
a bit of black pepper
32 oz pkg of frozen shredded hash browns
mix the above together & spread in a 13x9 pan
2 T of margarine - melted
crushed cornflakes - enough to mix with margarine
Sprinkle cornflake mixture over the potatoes.
bake uncovered in preheated 375 degree oven for 1 hour.
These are awesome. Unfortunately, they're basically a heart attack waiting to happen - but mighty yummy.
I've never had the Cracker Barrel cheesey potatoes, so not sure how these compare. We usually eat at the Machine Shed when we're near one - I think they're better than the Cracker Barrel.
You can use this same recipe, but stick it in a well greased crock pot on low for 6 hours or so. I don't like it quite as well in there... it seems a bit greasier. Anytime I make it either way everyone goes back for at least seconds - if not thirds.
