I am looking for an old recipe that a mom on my daughters softball team use to make. She said it came from Pampered Chef at one time. We are no longer in contact so I can't ask. Anyway, I remember it had shredded broccoli, shredded carrots, shredded cauliflower (I think), sour cream, mayo, and she always served it cold with club crackers.

Does anyone have the recipe or recall it? Help a sister out please!!! It was sooooo good and I want to make it
 
This is the one I have from Pampered Chef.
  • 1 cup broccoli florets, chopped
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped red bell pepper
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 cup light mayonnaise
  • 1/2 cup light sour cream
  • 1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
  • 1 garlic clove, pressed
  • 1/8 teaspoon coarsely ground black pepper

DIRECTIONS
  1. Preheat oven to 375°F. In Classic Batter Bowl, combine broccoli, onion and bell pepper. Add cheddar cheese, mayonnaise, sour cream, 2 tablespoons of the Parmesan cheese, garlic and black pepper; mix well and spoon into Small Oval Baker.

  2. Bake 20-25 minutes or until heated through. Remove from oven; sprinkle with remaining Parmesan cheese.

Does it sorta look like coleslaw, or more of a dip? My friend was my pampered chef "dealer" and she would make stuff for us to try all the time. I remember her making a couple of dishes like this....one that was sorta like coleslaw it had poppy seeds in it, and once she made something like this but used those salad shrimp in it and it was more like a dip that creamy chunky texture. I will send her a email and see if she remembers this recipe...She isn't really into selling pampered chef anymore, she has a lot going on helping take care of her mom( Alzheimers) and her grandkids (she had to take custody of them)... But I will ask ...also I have a couple of old pamper chef recipe pamphlets somewhere, with about 100 or so cook books not including all the recipe, handwritten, ripped out of magazines, printed off the computer.... I will take a look later on today, and get back with you..

It looks like more of a chunky dip. I remember her saying that she would put the veggies in a food processor to get itfinely chopped

Okay, go to the Pampered Chef website, select Recipes, and type one or more of the ingredients in the search box.

It could be that shrimp recipe LovesTimon mentioned, but without the shrimp.

Now that I look at this recipe it is very close, but this is a cold dip recipe I am looking for. It looks like this dip

I talked with my friend she said that if its the recipes she thinking of they are the older ones from the early days of Pampered Chef and doesn't think that they are available on-line, or that it could be something that the "Rep" did/created the recipe herself, or modified it in some way. She said she would modify recipes a lot when she first started. She said unfortunately all her stuff in in storage to make room for her grandkids. But this is what she thought it might/could be. This is from memory soooo not exact recipe just a rough out-line

Coleslaw style - Possibly - Broccoli slaw -or a variation of - or something like it. Long shred your veggies ( long match sticks), broccoli, carrots, cauliflower, squash, zucchini, and some sort of poppy seed or champagne salad dressing, poppy seeds, some green onions thin sliced( add in right before serving), salt and pepper to taste, needs to sit overnight in the frig, or blanch the veggies a very quickly to get the raw taste out, and make it easier to eat.

Dip style - Veggie dip - some sort of a variation of this. Shred whatever veggies you want, mix together sour cream and some type of jarred thick salad dressing like Maries ( over in the produce section) - she suggested blue cheese or ranch and then some sort of crumbly cheese. She also said you can do the hidden valley dry packet mix and follow the directions on the back and mix in the veggies. She said she always add in the salad shrimp to make it "fancier".

Not sure if this helps out.

Thanks! I am beginning to think either she has forgotten where she got the recipe from or it was a modified one from somewhere
