I was just down in Disney and went to eat at Les Chefs De France in Epcot. I am a Chef myself and very much into classic French cuisine so i was excited to eat here. That all changed as soon as we were seated in the outer glass covered part of the restaurant. This area was very hot and had flies buzzing around. Then the 1st course came which was Assiette campagnarde ( pates). Everything on this plate was lacking seasoning and all tasted the same. Then for my entree i had Red Snapper with Sauce Beurre Blanc. The snapper was way over cooked and no seasoning, sauce was all separated. I would never eat here again.
 
too bad that it is not up to par for a foodie like you. But for someone like me, it is good enough.
 
I was not looking for the best meal but just to enjoy some the french classics done correctly.
 
Have you consider trying "the Bistro" on the second floor? Maybe you will find this one a half step closer to your taste.
 

The previous poster beat me to the punch ... I was going to suggest that Bistro Paris, a signature restaurant located above Chefs de France, might have been more to your preference.

My hubby and I have eaten at Bistro and it's very good - supposedly a more authentic French menu. Not being a chef or from France I take this with a grain of salt, but our meal there was one of the best we've had at WDW.

We've also eaten at Chefs de France (lunch only) and have enjoyed what we like to call the Americanized French menu. :laughing: I think they're over-priced for dinner but lunch is usually more reasonable and they make a mean quiche.
