leftover pork

Yesterday I made a pork roast, it was in the crock pot all day with spices and a can of beer. It was amazing, shredded so fast and easily and it tasted very good. I served it with TX Toast, mashed potatoes and added BBQ sauce to the pork. Today I have about half of it left and would like ideas on how to serve it. I don't have rolls and don't have the $$ to go get any until tomorrow, I may end up waiting and cooking something for dinner tonight and doing pork sandwiches tomorrow but thought I'd see what other ideas might be out there.

Make tacos with the left over meat.

If you have tortillas and cheese, you could do quesadillas.

Yes simple Tortilla with pork cheese and salsa is always a hit here. Include onions if you like them. We use soft tortillas for these.

I considered tacos but my girls don't really like tortillas so was hoping for something other than that. When we have tacos (and we have tacos weekly) they just make plate tacos without the tortillas. I had the thought to mix it with Rice A Roni......

Nachos are always good.

I would just serve something else, then buy rolls for sandwiches, yummy!!

In a panini

In Brunswick Stew (but that has LOTs of other ingredients)

Shepard's Pie: bottom is mashed potatoes, veggies, meat, cheese
Taco's: with Rice instead of tortilla
Main Dish salad: Make a salad and top with the meat

Looks like you put bbq sauce over all of it so I would make chili or spaghetti sauce. You could always make home made rolls if you really want sandwiches. Way better than store bought.

Oh true....I do love me some nachos, and I have the stuff for that, including Velveeta for melting. Thanks

I might do this, I work Friday both jobs so sometimes it's a challenge to find something to feed the family in the 2 hours I have between them. lol You're right about YUMMY!

We do our tacos with rice all the time, rice, black beans and corn, meat and then all the cold veggies, cheese, sour cream, salsa. That's how we do what we call plate tacos.
Since we did mashed potatoes last night I wanted to avoid that tonight but I do like Shepard's Pie
I like the main dish idea salad idea as well, we all like a good salad, well except DD16, she won't eat it as a salad but she will put all the ingredients on her plate and eat them separately. LOL

dice up some potatoes, fry them up with some of the pork and any veggies the kids will eat, scamble some eggs and call it hash, serve with toast.
