Raspberry Swirl Slice

300b frozen (or fresh) raspberries
2 eggs
1 teasool vanilla essence
125 g butter - soften in microwave
1 1/3 cup self raising flour (sifted)
1/2 cup caster sugar

Fresh raspberries (if available) and icing sugar to garnish

Preheat oven to 180 C.
Prepare a 18 x 28 cm tin (shallow rectangle slice tin) by brushing with butter and lining the tin (I just line the tin and don't bother with the butter).

Cream sugar, vanilla essence and butter together until white.
Add eggs and mix in.

Sift in the flour and mix gently. Do not over beat.

Spoon about half of the mixture into the tin. If using frozen raspberries, spread the raspberries over the mixture in the tin. Place the rest of the mixture on top of the raspberries.

If using fresh, gently mix the raspberries with the remaining mixture and place in the tin.

Smooth out the surface.

Bake for about 40 - 50 minutes, or until a skewer comes out clean when inserted into the centre of slice.

Remove from tin on to a wire rack to cool (and then remove the paper lining).

Cut into squares.
Decorate with fresh raspberries (if available) and dust with icing sugar to serve.

Best eaten on the day it is made (which is the only drawback of this recipe :rotfl2:).

That sounds really good, though :) If we have some good berries, I may make this (or at least before the end of the summer).

Yup! Thank goodness for keeping a well stocked pantry..! I had a spare packet.

Icing sugar is powdered sugar, right? Google says so... Anyway, my family has about a CUP of it left :eek: We haven't really done a big grocery shop lately, so there are some things that we need that my mom always forgets to get unless I'm there. She tends to ask me because I'm the one that has OCD and organizes our cabinets :lmao: But yeah, between homemade funnel cakes and cake frosting (I never use storebought :sick:), we buy a fair amount of powdered, brown, and plain sugar. :3dglasses We just don't have any powdered right now :lmao:

Sorry...I thought I proof-read it...it's 300 grams of raspberries which is about 1 lb of raspberries; and a teaspoon! I'll go back and edit....so that the original recipe is correct.

I think so....this is the really fine stuff that is like dust.

Yeah, that sounds like powdered sugar :)

I haven't used the recipe I found online yet (the stuff I made before was a kit), but it sounds fairly simple.

Ingredients:

1 egg
2/3 cup milk
2 tbsp. sugar
1 1/4 cup flour
1/4 tsp. salt
1 tsp. baking powder


Directions:

1. In a deep skillet, heat about two cups of oil over medium-high heat until hot. Test the temperature by dropping a pinch of flour into the hot oil. If it sizzles right away without smoking, it's perfect.

2. Beat egg and milk. Mix all other ingredients in a separate bowl and slowly add to the egg mixture, beating until smooth.

3. Using a funnel, drop into hot oil working from center outwards in a web pattern. (You can use a gallon sized freezer bag instead of a funnel by pouring the batter into the bag, snipping off a small corner of it, and squeezing the batter into the oil.)

4. Cook for about 2-3 minutes, remove from the oil when golden brown and crispy.

5. Sprinkle with powdered sugar and serve.

The cupcakes are done. Another 20 minutes for the icing to set and then I can pack them away ready for school tomorrow.

OK....I started this reply last night and woke up this morning to find it unfinished on my screen....so here goes...

sorry about the loan but what the hell are you talking about I have NO idea what those abbreviations mean please speak English

Well since you live local and are not CRAZY like Fran and I you probably don't pay attention to the Disney Vacation Club. I am obsessed with the DVC, we own at SSR (Saratoga Springs Resort) and were hoping to pick up about 250 more points with the loan. 100 points at BCV (Beach Club Villas), 75 at VWL (Villas at the Wilderness Lodge) and 75 more at VGC (Villas at the Grand Californian Hotel). Unfortunately if we find another lender, the points at VGC will be sold out by the time we get financed. UGH! :sad1:

We bought 165 at VGC last year, but need more! ! ! ! Yes I admit we're addicts!

I'm sorry about the loan :hug: I hope something works out soon. What are you guys going to DC for? Anything special? :)

As far as DC, Fran requested that our next vacation be NOT Disney as we have not taken a non Disney vacation since really 1999. Any other trip we took, was combined with business, and though we did have fun on business trips, we didn't get to pick where we went, we just threw in some fun while we had a trip that we could write off.

For the Non Disney trip we had three places we wanted to go to, DC, NOLA and Montreal. She figured that DC would be the most ADA accessible place so we wanted to go there first because her mobility would be better in a year or two, so we could do NOLA then Montreal assuming that once her knees were fixed she would have increasing mobility.

We plan on hitting some of the Smithsonian musuems, some CW Battlefields, some nice restaurants. I'm just starting to put together ideas for what to do. I went to AAA on Friday and got some maps and a Tour Book. Fran started highlighting things in it. She wants to drive all the way to Gettysburg. We'll do a split stay 3-4 days out of town and 3-4 days in town. Yay planning!

Hey Alison I'm only local for the past 2 yrs and probably just as crazy Disney as anyone ;) BUT the abbreviations throw me "off" like NOLA above :confused3

If you get to go to DC (now this abbreviation I understand :lmao:) make sure you see the US Marine Corps silent drill team presentations I think you will both enjoy it very much plan on getting there VERY early it is very popular and gets crowded but SO worth it

NOLA = New Orleans, Lousiana. We both figured we need to lose a bit of weight before we go there!
 
I would have NEVER guessed that in a million years (re-the abbreviation NOT the weight remark just to clarify :) )

Emeril has a restaurant there called NOLA, I think it was his first one that he owned and operated.

Not a Universal person at all..the one & only time we went the girls were I think 9 & 10 they're now 34 & 35 :rotfl:

We didn't think Universal was all that hot, but the restaurant was REALLY good. I'm gonna have to get Fran to take me to Gordon Ramsey's restaurant out here, she hasn't wanted to do a lot for the past couple years with her knees and everything else hurting. I hope when she recovers from the left knee she'll want to get out and do more.
