I've been looking at maybe heading down in June, that would be the latest DW could fly, but it depends on flights, they're all pretty expensive right now... Would love to sneak a 3 day trip in at least though, because we probably won't be able to go again until DS is one, so Sept. 2012...

Thanks! Official due date is Sept 9th. DD came on her due date, but we feel like this one may be early...

Oh my daughters birthday is the 4th

Hope you manage to work something out!

Yeah now I have to figure out how to carry and have a ear plug in my ear.

When you do, can you share and tell me how? I have problems just carrying my i-phone around.

So, when are you next in Vegas?

I probably put that metal cover on it and put it in my back pack and hopefully the cord is long enough. What do you mean you have problems carrying an Iphone?:scared1:

Whilst Alison is having Thai for dinner, here's part of what we had for dinner LAST night...

Mixed Vegetable Red Curry

My starting ingredients:

2011May21VegCurryBlackBeanbeef025.jpg

2011May21VegCurryBlackBeanbeef030.jpg

  • Carrots, 2 – cut into chunks
  • Potatoes, 2 – cut into chunks
  • Snake beans, 1 bunch – cut into 1- 2 inch lengths
  • Broccolini, 1 bunch – cut into 1 – 2 inch lengths
  • Red Curry Paste, 2 – 3 tablespoons
  • Coconut Milk, 1 can – 375 ml
  • Water, 1 cup
  • Ginger
  • Kaffir Lime leaves, 6
  • Fish tofu, 1 packet
  • Lime juice, 2 tablespoon
  • Fish sauce, 2 tablespoon
  • Soft brown sugar, 1 teaspoon
  • Oil, about 2 tablespoon

I didn’t realize that I had run out of onion; otherwise I would have added onion to the list of ingredients.

Fry the red curry paste and the ginger in the oil for about 4 minutes (If you have onion, you would fry it here).

2011May21VegCurryBlackBeanbeef034.jpg

Add the coconut milk and water to the pot and let simmer for 5 minutes.

2011May21VegCurryBlackBeanbeef035.jpg

Add the potatoes, carrots and kaffir lime leaves to the curry sauce and simmer for 5 – 7 minutes.

2011May21VegCurryBlackBeanbeef038.jpg

I cooked the curry earlier in the day and continued the cooking process closer to when I wanted to serve it. At this stage, I placed the snake beans and broccolini in the curry….

2011May21VegCurryBlackBeanbeef041.jpg

…mix it in and turn off the heat, with the cover on.

2011May21VegCurryBlackBeanbeef042.jpg

About 5 – 10 minutes beforehand, turn the heat on the curry again. Add the fish tofu and simmer for about 5 minutes or until hot.

2011May21VegCurryBlackBeanbeef043.jpg

Turn off the heat and add the lime juice, fish sauce and soft brown sugar to the curry. Mix thoroughly.

2011May21VegCurryBlackBeanbeef051.jpg

Enjoy!

:cheer2: :cheer2: You can do it....update that TR of yours.....I know you can!

I probably put that metal cover on it and put it in my back pack and hopefully the cord is long enough. What do you mean you have problems carrying an Iphone?:scared1:

The iPhone is just that really inconvenient size for my hands. Just a little bit too big for them but not big enough for me to want to put it away...:sad2:

Look! I turned the page and Usnuz STILL managed to get at the top of the page...:lmao:

That recipe looks good (i like anything with curry)... Question about the fish tofu though, how is that? I eat a fair amount of tofu (I'm a vegetarian) but have never heard of fish tofu?

And here's the rest of my dinner...

Beef with Black Bean sauce

My second dish for dinner tonight was Beef with Black Bean sauce.

My starting ingredients:

2011May21VegCurryBlackBeanbeef029.jpg

  • Beef, 200 g finely sliced against the grain
  • Green beans, a nice handful, cut into 1 inch lengths
  • Black bean paste, 2 – 3 tablespoon
  • Garlic. I would ordinarily mince the garlic; but I didn’t feel like garlic breath tonight so I left it whole.
  • Ginger, finely sliced
  • Soya Sauce, 2 tablespoon
  • Asian wine, 2 tablespoon
  • Sugar, 1 teaspoon
  • Corn flour, 2 teaspoon
  • Water, ½ - 1 cup
  • Oil, about 2 tablespoon

Again, I didn’t realize that I had run out of onion; otherwise I would have added onion to the list of ingredients.

Marinate the beef with the soya sauce, asian wine, sugar, corn flour and ginger for at least 30 minutes.

In a hot wok, fry the marinated beef in oil until about 80% cooked. Remove and put aside.

2011May21VegCurryBlackBeanbeef044.jpg

Put more oil into the wok and fry the black bean paste for a couple of minutes with the garlic. (If you have onion, you would fry it at this stage).

2011May21VegCurryBlackBeanbeef045.jpg

Add the green beans and mix with the paste. Quickly stir fry for another minute.

2011May21VegCurryBlackBeanbeef046.jpg

Add the water and allow to boil/simmer for about 2 – 3 minutes.

2011May21VegCurryBlackBeanbeef047.jpg

Add the beef back to the sauce and cook for another 3 minutes.

2011May21VegCurryBlackBeanbeef048.jpg

Enjoy!

2011May21VegCurryBlackBeanbeef049.jpg

My third dish

I also pan fried some snapper, which had been coated with some corn flour in some oil …..

2011May21VegCurryBlackBeanbeef052.jpg

2011May21VegCurryBlackBeanbeef054.jpg

…and just poured about 1 tablespoon of soya sauce over the cooked fish.

I served the dishes with Basmati rice.

My dinner!

You and my DH would get on really well. He's vegetarian as well but he eats fish.

The fish tofu is effectively white fish flesh minced really finely with tofu; and then deep fried. For a pure vegetarian meal, you could get the fried tofu puffs. If you use the tofu puffs, you'll need to add a little bit more water (about 1/4 cup more) as the tofu puffs will soak up the curry gravy a bit.

Wow, interesting. I eat fish as well. I'll have to look around here for that, I think I'd like it.

I will try maybe on weds I dont want to miss anything, in fact one of our old fogies is on the same thread posting about the trial.

Are you in the Boston viscinity? The chinatown there would most likely have fish tofu or fish cake or fish balls.

Yes, just a bit outside the city. I worked right outside of Chinatown for a few years, so I actually know a few stores where I can look for it. Thanks for the tip!

Do the 50 people stay for the entire duration or is it a rotating lottery for each day?

So why are you both still up?

Rod - it must be pretty late at night for you....?
