Last Minute Plans in the Making for late August

I don't know what is wrong with me this year because I've had the trip to WDW booked for months now, but I'm only now just starting to make additional plans besides the room accomodation LOL

Trip Dates: Saturday, August 25th to Friday, August 31st.
I went around this time last year with my niece and during the weekdays it seemed like the parks were virtually empty and everything was a walk-in so it seemed a great idea to do it again.

Location: Boardwalk Villas
My first trip "Home" as a DVC club member

Participants:
Me - 41 year old Disney addict

Niece -- thinks I'm a bit weird for being so into Disney and would probably prefer to be going somewhere else since she "just went last year", but she's looking forward to the Pirates & Princess Party and SciFi Diner. She needs to be at the parks before she can get excited about going

My Dad - he gave me the down payment for DVC so he gets to come along on this trip. I think he could not care less about WDW, but he's happy to have someone else (me) do all the planning and is quite happy never leaving the property. Wants to relax and take it easy. Hahahha!

Current plans:

First Day, Saturday
We get into MCO around 4pm on Saturday, August 25th. ME to Boardwalk. We're going to forego the parks for the first evening because I want to explore the Boardwalk.

I made a dinner reservation for 6:40pm at Spoodles. I hope this isn't too early because I will need to run over to Epcot to pick up my temporary DDE card.

The 20% we will save on alcoholic beverages will more than pay for the card LOL

Sunday
Plan to visit MGM. Lunch scheduled for 12:40 pm at SciFi Diner.
The only thing I care about is that we get to ride Tower of Terror three or four times and that my niece gets to go on Rock N Roll RollerCoaster. I'm a bit concerned about crowds on a Sunday though.

If anyone thinks a different park would be a better idea on Sunday, let me know. I can't remember what day of the week we went last year, but crowds weren't really huge even on the weekend. We can always go back on a weekday if the crowds are horrible.

Monday
Epcot maybe.

I called Dining today and tried to get a ressie for Le Cellier for any day of our trip and there were no ressies available for lunch or dinner the whole week. I'm going to keep trying and if successful the reservation will determine what day we actually do Epcot. If we don't do Epcot on Monday, we'll do AK.

Anyone ever have any luck with walk-up at Le Cellier?

Tuesday
Morning at the pool. A late lunch at either Whispering Canyon or Trail's End if I can't get a Whispering Canyone ressie, then over to MK for Pirates & Princess Party and we'll stay until closing. My niece is already planning her outfit and I will probably dress up too

Wednesay
Animal Kingdom - last year we only spent a few hours here and likely will do the same this year since it just isn't my favorite park. I might try and book a ressie for Jiko or Boma, but I'm concerned that we won't even be staying late enough at the park to bother. May end up switching this day with Epcot

Thursday
Probably back to either MGM or MK if we didn't manage to hit all the major rides during Pirates & Princess. Downtown Disney is a possibility too, but I expect we may end up there Wednedsay evening after AK.

Friday
Breakfast at Spoodles, then time to head for home.

So, not much in the way of planning. Usually I completely overplan the trip and then it goes out the window because no one wants to get up early. So this time I've decided to just take it easy since I'll be going back on my own during the winter and can do whatever I like then.

This trip I'd like to do some non-theme park stuff, like maybe visiting some of the different resorts and doing the campfire and movie at either the campground or at the Beach Club.

Last year I got parkhoppers and we ended up not hopping parks so this year i am skipping it and just getting six day passes for my niece and my dad. (I'll be getting an annual pass). If we decide to park hop, we can always add it on, but I have a question. In all likelihood, we probably won't go to a park on Saturday, so could I use up two days worth of tickets on one day at two parks, or do you have to get the park hopper?
