Jello Spritz Butter Cookie Recipe per requests..

For those who requested this recipe, here it is.. If it gets lost tonight before those who wanted it see this thread, I'll bump it up for you tomorrow..:santa:

Jello Spritz Butter Cookies

3 and 1/2 cups flour
1 tsp. baking powder
1 and 1/2 cups butter
1 cup sugar
1 pkg. (3 oz.) dry Jello - flavor of choice
1 egg
1 tsp. vanilla
food coloring of choice

Preheat oven 400 degrees.

In a large bowl, mix flour with baking powder.

In a second large bowl, cream butter. Gradually add sugar and dry Jello, beating well. Beat in egg and vanilla. Stir in food coloring of choice to match Jello of choice (green for lime; a little red for cherry; more red for raspberry; yellow for lemon, etc.). Mix well.

Gradually add flour mixture, mixing well.

Force dough through cookie press (or use Electric Cookie Shooter) onto ungreased cookie sheets. Sprinkle with additional dry Jello, sprinkles, colored granualted sugar, or other decorations of choice.

Bake at 400 degrees about 8 minutes or until edges are golden brown. (Watch carefully - you don't want to burn the bottoms!) Cool a minute or less and remove from cookie sheets.

Makes about 10 dozen cookies

They are SO good - no matter what flavor of Jello you use..

You're welcome.. Our favorites are lime (I have a Christmas tree disk with my cookie shooter); cherry; and wild raspberry.. Yum!!

Funny thing is when you first bite into it you don't taste much - then when you start to chew - WHAM - you get the full flavor..:santa:

If you want tangy, super-duper lemon, I'd substitute the vanilla with lemon extract - or at least do half and half..:thumbsup2

I'll try it! The "normal" spritz cookies we do are made with almond extract and our regular cutout sugar cookies are made with lemon extract, so this might be kinda like combining the two. I'm really curious to try them now!

I was just looking at my holiday cookie list and thinking it needed something different. I had chocolate, minty chocolate, peanut butter and chocolate, cream cheese and chocolate and orange. I found a cream cheese spritz recipe and was going to use that, but I really wanted a lemon.

Now that you mention lime - I really want that too!

They really are good! And because they're smallish (depending on they type of cookie press you use), you can make more than enough of them without having to "double" the batch..:santa:

Well... I'm not sure if that would make them "spread" too much while they're baking - and you wouldn't want to make them too big because they would need longer to bake through and you would be kind of guessing as to the correct amount of time..

If I were going to try it, I would roll a piece of dough no bigger than maybe one of those little foil wrapped chocolate balls - or "maybe" the size of a chocolate covered cherry.. Then I would flatten it down some before baking..

I think it could get pretty tricky, but it "might" work..

I think I might try it! But I think first I might try heading over to AC Moore and seeing how much a cookie press costs ;)
