I'd still move MK up to the first day, but that's just me. I can't imagine waiting until the 6th day of a 9 day trip to see MK. But you know your group's preferences.

Is this too much... Ha! I laugh at your puny schedule. Here was my first trip with (nearly) elderly parents 3 years ago in mid August. (which ironically was cooler than when we were there just last week!)
Day 1 - Arrive at 11 at Grand Floridian and get checked in, Take bus to hollywood studios, lunch at sci-fi at 1:45, ride star tours, see Indiana Jones Stunt Spectacular, bus back to resort for quick nap, monorail to Polynesian for Ohanas at 6. Back to GF to watch fireworks at 9.
Day 2 - Breakfast at CRT, ride practically everything at Fantasy land and the Speedway cars, lunch at Liberty Tree Tavern, back to the resort for an afternoon break and hit the pool. Dinner at 7pm at Tony's Town Square (Yeah, I know but it was our first time and I was trying to minimize movement and we had to be in the park for) Fireworks Dessert Party at Tomorrowland Terrace afterwards.
Day 3 - Checked out of the GF and then went to breakfast at Crystal Palace BEFORE the park opened! Rode Haunted Mansion and Pirates of the Carribbean, back to the GF to eat lunch at the Cafe and then headed home.

Having done water parks on our first and second visit with a one year old and again with a 1 year old and 4 year old, I say keep the water parks. They are fantastic and really help create more of a vacation vibe to our trips. Typhoon lagoon is awesome and honestly parts remind of Castaway Cay (DCL private island) Kids loved it and so did we. Keep them.

I would though adjust the way you are doing the parks. Personally I would add days to my parks portion and do water parks for just a few hours a day for 3-4 days. Hit the parks in the evenings on those days. For example one day hit the water parks around 10-11 and head out around 3-4. Go back to hotel change rest up and head to dinner in the park and hit your fast pass rides. Animal Kingdom is awesome at night and not as hot. There is nothing like Magic Kingdom at night. Rope drop is great but would only have that for MK honestly. We never stuck to a regular schedule at Disney as my kids were out of routine and did fine. It would be worth the extra hundred and change your trip entirely. With fast pass plus this would be ideal as you would be able to schedule your fast passes for the evening around dinner time. We did this pre fp+ and those trips were our most relaxing ones we have ever had at Disney. YMMV

The reason we are doing this is because if we go to magic kingdom the rest of the parks seem to lack in comparison its kind of a build up a keep the best for close to last and also because Saturday sunday and monday arent favorable days to go due to it being laborday weekends. Tues is a special ticket even from 7:45 am so we wont be able to rope drop so that leaves wed, and Thursday

2 reason for not hitting MK first are dont want every other park to seem bland in comparison also our 1st 2nd and 3rd days fall on sat sun and monday which is labor day weekend and labor day and tues is a special ticket am event so wont be able to rope drop thats why we are waiting till wed and thurs

Right. Crowds will be let in on an EMM morning just the same as any other day, and, and it hasn't really affected rope drop at all since it started.

No park hoppers the people we are going with have a pretty relaxed mentality the arent really go go go all day long types and neither are we really we are staying value so no exotic pools lol and they dont want more park days they want at least a day or 2 in the water parks so it is more economical to get the wp&m option for us as to pay for 2 days in the water parks. And if I only go 2 times it is also a waste which is why we want to get in at least 3 times

You almost pay for the entire WP&F with just one trip to a water park. It's $68 more for an adult WP&F ticket, but a one day ticket to a water park is $60. If your group is happy with just one or two days at a water park, there's no need to go a third day to get your money's worth.

I think you are spending too much time at the water parks but this is just me
