Is there anything you want to know in particular?

Yes, I was wondering if the milk protein changes in yogurt or hard cheese enough to be "less allergic"...I'll be really sad if I can't have yogurt.

Also, since I am subbing a lot with rice, is there the potential to develop a sensitivity to rice?

Yogurts and hard cheeses are easier for people who are lactose intollerant to handle as the lactose is mostly gone, but the casein remains intact. Sorry.

Try the So Delicious yogurts by Turtle Mountain. The soy ones are pretty good but the coconut milk ones are devine. They just announced a new agave sweetened soy yogurt which is easier on the blood sugar (in case that's a concern) though I haven't tried it. The Whole Foods Market in my area carries the So Delicious yogurts (the ice creams are just as devine). I like using the coconut milk products in order to avoid too much soy since we already use soy milk and soy cheese.

As to whether somebody will develop a sensitivity from consuming a lot of a certain food, nobody really knows. Some people will and some people won't. Most don't. It's probably best to not eat too many simple carbs anyway so overloading on rice products really isn't the best idea. Remember that just because it's gluten and casein free doesn't mean it's healthy. I try to remember basic moderation and balanced meals are still important.

Those So Delicious brand coconut milk yogurts and ice creams by Turtle mountain ARE gluten, dairy and soy free. They also have a coconut milk but we haven't tried that yet (I've read that it tastes as good as the ice creams and yogurts).

Galaxy Foods makes a vegan rice cheese that's gluten, dairy and soy free. It's pretty decent. I use it to make mac & cheese (melt in a pot with some spectrum shortening, milk alternative and salt & white pepper to taste and toss over gluten free pasta) and grilled cheese sandwiches as well as on burgers.
