Briar Rose, here is a chart from the Disney World website that Compares Disney Resorts. It should help answer your question.

Basically, deluxe resorts are more elaborate in design and what they offer (sit-down restaurants, etc.). The rooms are usually larger than the other resort categories.
 
Many of the deluxes also offer some transportation benefits. For example, the GF, Poly, and Contemporary are on the monorail; the BWI, YC, and BC are a short walk to Epcot, etc.
 
Most deluxes seem to have bigger and better pools than the mods and values. Also the deluxes are hotels with interior hallways as opposed to the mods and values which are motels with exterior doors.
 

Also, deluxes have either a private patio or balcony, moderates do not.
 
I prefer deluxes for the following reasons:

The beds are queens rather than doubles in most deluxe rooms.

You get a semi-private patio or balcony in almost all deluxe rooms.

The rooms are significantly larger in most deluxe resorts.

The rooms are significantly quieter. You don't hear the neighbors toilets flushing or showers running. Because the corridors are interior, you don't get much transient noise. The buildings are generally set back away from parking and bus area, so there is less traffic noise. The rooms themselves seem to have better soundproofing.

The toiletries are not in a dispenser on the wall. In some cases they are very nice, and include toothbrushes, mouthwash, q-tips, etc.

The rooms offer real closets as opposed to hang bars (this is a biggie to me!)

Deluxe resorts offer generally larger pool areas with more amenities at the pool itself.

Deluxe resorts generally have a larger resort dining selection.

Deluxe resorts offer a concierge option.

In most deluxes there is a large semi-private dressing area, and the bathrooms are considerably larger.

There are more recreational amenities at most deluxe resorts.

Most deluxe resorts have excellent locations, with easy park access.

Most deluxe rooms have more drawer space.

Most deluxe rooms offer either a comfortable easy chair with foot stool or a day bed. It's nice to sit on something other than a bed or kitchen chair.

Turn down service is very nice. I enjoy coming back to the room at night and finding the towels refershed, beds turned down, and the room softly lit.

Morning newspaper. We aren't go-go-go park people, and really enjoy reading the morning paper over breakfast.

Thanks so much for all of your great information! DH and I are staying at WL this November and we are very excited about the "perks" of staying at a deluxe resort. I feel as you do, definitely worth the extra money if you plan to spend time (other than sleeping) in your room.

Many of the differences are things that a lot of folks don't care about. It seems you would get the most benefit from staying at a deluxe if you plan on spending A LOT of time in your room or at your resort. We've stayed at deluxes and moderates, but we are usually "park people", so we don't spend a whole lot of time enjoying the surroundings of the resort. I figure if we just want to hang around the room and use the pool, we can find much better options at places other than WDW.

I never really understood the need for turn down service, (I guess others like their bedspread pulled down for them), so that is a non starter for me. LOL, my wife and I really can't tell the difference between a double and a queen. Once you have enough drawer space for a weeks vacation, an extra drawer or 2 does nothing for me. Concierge service, once again if you're at the resort all day and night this may be useful.

Interior hallways, IMO, are much noisier than outside access. At the Poly you can always hear kids running and ADULTS yelling in the halls.

I think the only advantage, (To most people), would be location, location, location. It IS nice to take the monorail to the MK rather than wait for a bus, or walk to Epcot or MGM rather than a bus.

I say if you're going to Disney to hang around the resort for your vacation, go to a deluxe, (lol, or go elsewhere). If you're going to Disney for the 4 Theme Parks, Pleasure Island, golf, etc...Moderates are great.
 
For us, deluxes are worth it. We do parks in the morning and enjoy the resort in the afternoon before venturing out again for dinner and some nights fireworks, Illuminations or Fantasmic. Like ducklite, the closet is very important to me. We unpack everything and stow our suitcases in the closet. I don't want to look at clothes or suitcases when I'm in the room.
 
We've stayed at all 3 categories and prefer deluxe... although we do like the moderates (wouldn't do allstars again now, but if we had kids we would). There are a few reasons:

Queen beds - we have one at home, and we can definately tell the difference from the double - every time we stay in a hotel with them I don't get any sleep because he tosses and turns so much and I have no room.

Location - it's so nice to be near things (although we are spending half our trip at the WL this year... and the WL doesn't have as many options, but its cheaper as well so it works out).

Interior hallways - this is the biggie for me. Not for any noise issures, but because I do not feel secure in hotels with doors that open to the outside and I refuse to stay in them. I've already made our reservations for the hotel we'll stay at on the way down and back because I've been there and I know it's inside! I know I'm paranoid, but it just really bothers me.

Nice restaurants - we would go to other resorts, but its nice to have them right there.


Having said that though, we would definately stay at port orleans again as we really liked it. When we stayed there we were always in the parks so the hotel wasn't an issue. Now though we like to relax more so we appreciate the deluxe hotels. I do think they're overpriced though... we stayed at the GF last year with a discounted rate of over $200 a night off... we loved it, but no way would we have payed over $400 a night for a hotel room. Even the moderates are kind of high for what you get... but we still love the resorts and stay there, so we're not helping get the message across :)

We sleep in a king bed at home, so there is a noticable difference between a double and queen for us.

When we go in the warmer months, we usually stay at a moderate, because we are on the go more. In the colder, winter months, we enjoy the deluxe resorts, as we tend to stay around the resort in the evening, and enjoy the greater variety of ammenities... and also, not having to go outside to get from one part of the resort to another.
