Excited for the new challenge, hoping to hit my goal of 25 down by vacation, that'd be awesome.

Kind of bummed, Bruce had been on days for a while, but the union came in and complained that basing the schedules on seniority was unfair :confused3 so now he is back on a wonky unreliable rotation and is on evenings for at least a few weeks so once again i'm a lonely girl every night.... At least for the time being, he still gets every other weekend off, thats a positive i suppose.

E - i don't know that you will get much help from me if i post my dinner, since Bruce is working its not that good, for example tonight was Cheerios & toast w/ homemade strawberry pinapple jam... not sure that'd fly with your hubs....

I need input, the only room in the new house that we are going to paint is the second bedroom (the one that is currently highlighter pink - ugh) not sure what color to paint it? I'm kind of design challenged. Also, does anyone have a washer/dryer that they just adore? I need to buy a new set for the house and if i'm going to spend money on it i want to make sure its GOOD....

I would LOVE it if we would all post what we are having for dinner each night. Not for points or tracking reasons. It doesn't have to be diet-friendly or anything. Just to get ideas, etc.

For us tonight: Broccoli cheese soup (I make a really low fat version) and a side salad.

SO THIS is brilliant! Cause dinner is the second hardest part of my day. No my life!

I'll have to post in arrears, as I don't usually know what I'm having for dinner until I'm standing infront of the seasoning packets, a throbbing bundle of stress, praying for divine intervention and hissing, "No! Begging for cotton candy fruit rollups doesn't mean you're going to get them! Now zip it, lock it and put it in your pocket." (Kat - see what your missing out on.)

Last night we had baked ziti. With rigatoni ironically, (I can't find ziti on the shelf.) browned hamburger, motz cheese, garlic parmesian sauce. 400 cals per serving. And lite Texas toast. 130 per piece.

Lisa - thanks for telling me! What sort of things do you make them do? How do you get ideas? How often do you change it up? How long are sessions, or is it class by class?

Erika - I need that recipe. I love broccoli cheese soup, but I never eat it anymore.

Dinner for me is up in the air. I might order out, just to complete this day of hung-over eating.

Erika, do you think you don't get hangovers because you just process stuff out of your body fast? Like, your liver is really working well?

My body really reacts to alcohol but not as much to caffeine. As you saw, I have to pound Diet Coke to get the lift. Which, weirdly, works about as well as 5 mins in a store. :rotfl:

I so want to wake up well rested tomorrow and detox. Fruit and veggies and water. Can't drink plain water hungover unless it's hot out, so i am drinking sparkling. I really hope I'll feel well enough to do spin tomorrow.

God, I hate that banana. How do we hide that horrible, phallic, mocking wiener? It's all like, Come and get it, ladies! Right here!

YES! Exactly! That is why I LOATHE that banana! But at least now Lyz hates it, too!

Hangovers--there is a secret. I will share it with you because I love you. The biggest reason we get hung over is due to dehydration. Really. So for every alcoholic drink I have (even a shot), I make myself drink a glass of water afterward. Maybe not a full 8 ozs., but at least 6. And I take 2 ibuprofen after the second drink, and 2 more before bed.

Hmm... *off to get water*.

Oh--and the other part of not getting hungover is that I have a REALLY high tolerance. So it takes an enormous amount to get me hammered. Some say it is due to high muscle mass, but I don't think so. Even when I was a fatty I didn't get hungover.

If you were a fatty, I was grazing by the side of the road.

Tonight was a big skillet of stir fry. An onion (cut in hunks), a couple of carrots (quartered, 2 inch pieces), a box of mushrooms (quartered) a cup or so of brocolli and a couple servings of shrimp. Tossed with some Asian noodles and a hot peanut sauce. There's enough left over for lunch tomorrow.

Last night was turkey burgers with sauteed onions and mushrooms with roasted new potato with a little rosemary.

Tomorrow is fajitas - chicken - and another onion! We go through at least four onions a week. I don't like them raw though.

Sunday night was oven fried chicken breasts (spicy panko bread crumbs - Zataran's) with mashed potatoes - I make the mashed potatoes with chicken broth (frozen cubes in the freezer - don't let the rotisserie chicken go to waste ; ) and skim milk. They're kind of lumpy - cook's choice.

We do SO much better if we have a menu to work with.

Erika - nothing exciting to report for my dinner tonight. Just some JC Mac and cheese and green beans. I added a little chicken to it since I was in need of some protein. I did make it to the gym. It wasn't horrible, but not great either.

Sounds like you all are having a good night. Thanks for the yummy recipes and dinner suggestions.

Shaking head. Those are really specific guidelines. And you don't even eat meat. Goodness, your choices are limited. Do you have a spreadsheet? I understand. It the same but different at my hizzle.

I so had one well I guess not a spread sheet but I made a menu like the school lunch menu. I took it food shopping with me and that way I made sure that I got everything I needed and NO extra trips to the store!

For dinner tonight and lunch too I had Hamburg macaroni tomato soup.

So for points today:

Breakfast: 1 cup of fresh pineapple (1) cup of tea(0)


Lunch: Soup(8), coke zero (0)

Snack: 1 small slice of sugar free cheesecake(2) and a 16 0z coffee(1)

Dinner 2 Cups of soup(17.5)

For a grand total points of 29.5

No walk today raining! It stopped as I got to work! :headache:

Dinner: meatloaf (made with mostly gr.chicken & a little gr. pork), couscous, steamed broccoli.

EE--I use allrecipes.com and love it. Nancy uses it, too.

And like Steph mentioned, I plan my meals by the month. And I also only do one MASSIVE grocery shopping trip per month. Then I just have to run to the little local market once per week to get produce and dairy. But I have a full pantry in my kitchen and then we have "overflow" shelves in the basement. I buy like 10 boxes of cereal, 5 jars of spaghetti sauce, 3 bottles of ketchup or whatever at a time, so when anything runs out in the kitchen, I just run down to the basement and bring up a new container. It has worked out really well.

As far as menu planning goes, I do have a system, just not a spreadsheet. I started by using a system called Saving Dinner. And it really worked. Not only did it give me great new menus, it really helped me plan a month of meals at a time. And it is structured well so that you don't waste food. For example, let's say you have a meal that calls for 1/2 can of tomato paste. Later that week or early in the next week, there is another recipe that also calls for a 1/2 can of tomato paste. This way, you never end up throwing out stuff.

And the real benefit is that I no longer end up in the state that Lyz described. Having a panic attack in the kitchen at 4:45 because dinner is in an hour and I have no idea what I am making and/or I am missing a key ingredient.

For anyone interested, it is www.savingdinner.com. It requires a small payment, but then you get all of the recipes/menus e-mailed right to you. And you personalize them. Like there is a vegetarian one, etc.

And the reason it is called Saving Dinner is because the philosophy is really about bringing the family back together for family dinner time, since so many families have lost sight of this. Obviously, I don't know first hand about the meat meals, but people RAVE about them. Again, the meals are designed to be family-friendly, so that the kids will eat them.

Right now that is my biggest problem. My kids are good eaters, for the most part. But I just can't expect them to eat tofu quinoa casserole, you know? I often end up cooking two meals--one for me and J and one for the kids. And that can be a pain. But I will say that it is getting easier. They are getting MUCH better at trying new things. I think part of the problem is that a lot of vegetarian dishes/ingredients have just such weird sounding names that the kids don't want to try it based on the name alone.

Ok, enough about that. Sorry! Guess I didn't realize I had so much to say on the subject.

1. Getting up. HATE that part. Sometimes I wonder, when I win the lottery
and I have a nanny to get the kids on the bus, and someone running my office, how long I'll enjoy the sleeping in I plan on doing. Think it'll wear off?

2. My interpretation of baked ziti. (Seriously I couldn't be easier!)

1/2 lb lowest fat hamburger. 1lb pasta. 1 jar of spagetti sauce of your choice. (I don't use our "usual" sauce as I want it to taste different than spagetti. Thus the garlic parmesian.) Package of motz cheese.

Preheat oven to temperature of garlic bread. (425 for lite Texas toast).
Boil pasta while browning hamburger. Drain pasta, put in 9x13 casserole. Drain hamburger, mix into pasta. Mix in the sauce. Right from the jar. No heating necessary. Top with the cheese. Bake for 20 minutes, give or take. I like it when the pasta to the edge has dried out a little. Mmm good. Bake your bread while the pasta is in the oven.


LIZ--

• 3-5 cups fresh broccoli – chopped (depending on how much broccoli you want in the soup)
• 3 (14.5 ounce) cans vegetable or chicken broth
• 1 onion, chopped
• 1 tsp. olive oil
• 1/4 cup all-purpose flour
• 2 cups fat free half and half (you can use skim, but the ff half and half works much better)
• 2-4 cups shredded sharp cheddar, depending on how cheesy you want it. (I use 2 cups of fat free cheddar and 1 cup regular, full fat cheddar.)
• 1 pinch ground pepper

DIRECTIONS

1. In a large pot over medium heat, saute onion in oil for 5 minutes, or to desired tenderness.
2. Add the flour to the onions and stir well, forming a pasty substance.
3. Gradually add the milk/half and half and stir until thick. Add the broth and the broccoli mixture and stir well. Keep on med-low heat for 10 minutes.
4. Then add the cheese, stirring until melted. Finally, add the pepper.
(Note: Be careful not to let the soup boil, or the cheese will break down.)

It almost makes me wish i could drink... almost.... til i see people pouring themselves into work the next day.

Your Basement sounds like my DAD's... I swear I could go shopping in his! If it's on sale 10 for $10 then he buys ten. IF it buy three get 2 free he does! He has 6 metal bookcases down in the basement and they are all stocked with what ever you could think of. You want Hot cocoa don't have the flavor upstairs in the kitchen check the basement There are 6 more boxes and all different flavors. Soda Last time I went there had to be at least 20 12 packs!:eek: .
 
So I had a boring dinner tonight. My crazy work schedule means my mom cooks or thaws something I cooked over the weekend for the kids. They had chicken stew. I had a salad with a little jack cheese and a boca, no bread. It's been a staple. Boring, simply boring.

HAMBURGER TIP--Ok, ok, I know what you are thinking. What kind of meat help can veggie girl give me? :lmao: But a great way to really, really, really reduce the amount of fat and calories in your meals without sacrificing protein is to use the veggie "burger crumbles." Boca makes them and so does Morning Star Farms. I like the Smart Ground brand the best. It is the vegetarian equivalent to ground beef. I use it all the time. Anything you all would put ground hamburger in, I just use this stuff instead.

Now, I don't know if it would fly with a guy like Bob. If someone is open to it, then it is great. And if you have never used it before, then you want to use it in something like the ziti--where it is not the "main flavor." Like, I use it to make meatballs (which are killer good) and meat-less loaf. But I would never suggest either of these to anyone who is used to real meat. Because the "meat" is the main flavor and you can tell that it is different.

But it is all natural, really healthy, fat free or close to it, and high protein. Incredibly healthy in every category.

It is reasonable. I think it is $29 for a whole year. And I only did it for a year. That was more than enough for me to then figure it out on my own and make what I knew my family would like. Because some of her vegetarian meals wouldn't fly even with me, let alone the rest of the family. But again, her meat meals get rave, rave reviews. And there is even a low-fat version so that all of your recipes are lower in fat. And there might even be a low carb version as well.
 
EE--since we are talking food and recipes tonight, the Boca is my staple, too. But I have found a way to make it a huge treat.

I love, love, love sauteed and carmelized onions. So yummy. So I will fry up (with just a little olive oil) like 4 or 5 onions. A TON. :rotfl2: And I really cook them for a long time until they are deep brown and carmelized. Then I just throw them in a container in the fridge for the week. Any time I want a Boca, I just heat some of the onions up, and then I can have them on top of the boca burger. And really, it changes a boring veggie burger into something totally yummy.

J does the same thing except with mushrooms and swiss.

For the kids, they like bacon cheese burgers (veggie bacon, of course). So I will do it that way for them. Again, just takes something boring and makes it one of my favorite meals.
 
E - no soup and bread isn't normally enough for dinner. We are fighting sickness and exhaustion headaches at my house so bunches wasn't necessary tonight.

I bought boca burgers but have yet to make them. Gotta do that.

I love carmalized onions too. We eat them with steak and mushrooms.
 
Please, for me, try a boca with onions tomorrow. The onions take a long time, which is why I do a bunch at once and just keep them on hand. And depending on how I am doing with calories, I will often have a ww or other low cal burger roll. Sometimes I go without the roll and it is still good.
 
MMM I hungry now for caramelized onions and peppers! Especially with Fijitas.

Oh and Lisa, I forgot to mention. I didn't get into B2B either! J's company is a sponsor, so they get 50 slots. All slots had to be filled by noon on Friday. At 10am, there were only 37 employees signed up, so they opened it up to spouses. I was first on the spouse list so I thought I was all set. And wouldn't you know, by noon they had all employees on the list, so I got bumped! :headache: And since I was racing at noon on Sunday when they opened registration for everyone else, I got locked out. I still might bootleg it, though. What do you think?
