In Search of my Body...Not The One I Ate.. #4 "Inspiring Others... 1 Tiara at a Time"

I have questions about making the biggest bang for your caloric buck.

What is a breading low in calories but crisps well for fish? We usually have fish deep fried and breaded and well that just isn't on the agenda anymore. I'd like to introduce fish, but I cannot set down a piece of baked tilapia without some kind of breading.

I am struggling to come up with dinners that my husband/family can eat alot of and be filling at the same time.

Like last night we had bbq'd chicken breasts. 220 calories for the chicken, and 30 for the bbq sauce. 250 per piece total. I ate one piece for dinner. Hubs ate 3. (Which by the way, at 6'2" and very active is way under his bmr. His limit is 2400.) I've got him eating around 2000 a day for weight loss. Yesterdays example: I'm packing his lunch in the morning, and it's around 690 calories. He still has 1310 left for dinner. He had 750 in chicken, 100 in brocolli, 140 baked potato, and 210 in peas. Air popped popcorn for a snack.

Ham steak is tonight. (And I'm looking into bean soup. I know the fiber is good, just not sure yet of calories. Off to find a recipe.)

I still have to fill up the rest of the week and he is totally picky. Chicken - he barely chokes down. We are a red meat, potato and bread family. So cutting out dinner rolls is also important but hard. Do you know of a low cal bread option other than a slice of Heiners 35?
I could make dinner rolls at 120 calories a piece and just have one, but that is not the reality. I have 3. Because they are there.

Hopefully you guys can offer some options I haven't thought of taking into consideration the above.

Okay Lyz, this might be long.

First of all, breading. I use light bread or whitewheat bread, or something in the 40-50 per slice range. Toast it either in the oven or the toaster, then put in the blender or a food processor with italian seasoning.

Then use egg beaters to coat fish, bread, and bake in the oven.

You can also try other spices... parsley, dill, lemon pepper, etc. Dill is especially good on salmon.


Meat and potatoes ideas...

I sometimes pan-fry in non-stick pan w/ some cooking spray, thinly sliced potatoes and onions. Each medium idaho potato comes to about 100 cals and you can get a lot of thin slices from them. I have also seen on HGTV how people slice up fries and then boil them for 3 min or so, then oven bake with seasonings and some cooking spray. That keeps them cooked but crispy.

Meat. I buy 96/4 ground beef, which is 140 cals in 4 oz. You can use for hamburgers, for shepherds pie (brown the ground beef, add chopped onions, carrots, mushrooms, celery, whatever you want here, add 1 can beef gravy and mix. Add mixture to bowl, layer can of corn, layer instant mashed potatoes, bake at 350 until bubbly. Can add 2% cheese on top to flavor), for spaghetti with meat sauce.

We also do small steaks sometimes, NY Strip tend to be the leanest.

Chicken I do multitudes of ways. Thin sliced and pan fried, or oven baked, with breading from above. Boiled until shredded and put in enchiladas or tacos. Slice and make fajitas with peppers and onions.


My ideas mostly come from recipe substitution. In other words, try to find where I can cut calories and still keep taste. Sometimes the experiments fail but at least then you know what to keep for treats.

I am going to try and attempt veggie lasagna this weekend and I will post that recipe as well.
 
Liz - never asked - had you visited Ireland before? Not sure if it is your husbands 1st time there or if you had gone as a couple...sad time to go and also sad to not experience things for the first time together....glad your husband cares enough about his brother to make sure he has his head on straight regardless of the decession...not too many guys will step out of there comfort zone to show their emotions to another guy...regardless of how they know each other...:hug:

My BIL got married there in 2004. We all went. My parents, his parents, aunts and uncles, cousins, friends, Emily who was four months old. It was a big wedding for the groom's family all being American. I think there were 50 or more of us from the US.

Not sure if I ever made this clear here, but she is Irish. Not Irish-American, but born and raised in Ireland. She lived in London when they met, did her undergrad there (actually in Manchester) and was getting her Ph.D at UCL. She came to Philly to do some research for the summer (I think this was 2002), met Matt, they fell in love. A year later he was living in London, doing his master's at UCL.

They got married in November of 2004. It was two days after Thanksgiving, so this Thanksgiving, the 27th, was actually their four year anniversary. In 2006 her dad was dying and they were finished with UCL so they moved to Dublin. She got a job at UCD and he started his Ph.D. They're been living in Ireland for two years now.

Like I said, we all went in 2004. That is the only time I've been to Ireland, although Nick has been a few times. Once, before they moved there, and once right after her dad died, and once, for the wedding. So three times. My inlaws have been a few times as well - maybe 3 or 4. They went to meet her parents in the beginning. They also went to London several times to visit. Interestingly, I lived in London and love it there and have been back but not since Matt has been an ex-pat. I didn't visit them once. Some SIL I am, huh?

It is a sad reason to be going. We had hoped our next visit would be to see a new baby or new house, not to basically talk sense into him. Thankfully, Nick and his dad and I am all on the same page. I do wish I could go and just hang out with her, go out for drinks, meet her friends. But that's just not in the cards. We can't swing two tickets.

On the other hand, at least they won't be doing any sightseeing! So all I'm missing is eating and drinking in Dublin, which is still pretty cool. But maybe I can go to an Irish pub in NYC and pretend. ;)

So, long post. There's their life story! Thanks for asking. It's fairly consuming right now, as you can surely tell!

Thanks to everyone for all ideas. Dinner is the hardest part of my day, and now that we are counting calories, it's, well actually it's alittle easier cause we are eating for calories and not for getting full of delicious food, but it's still trying to come up with a variety for the long term.

I wasn't planning on doing the internet search, but my family and friend recipe search. Between my mom, a few aunts and my friend who is in the food service industry, there are plenty of options.

One question though - do you cook in a crock pot at all? Lots of good options for that, but I'll hold off if you don't use one.

Hey guys! I'm here... I'm sticking to my plan - although I didn't use the super glue - I used repositional glue... I've had a coke today. I tried not to - it just happened. So... I messed up that part of my goal. Therein lies my problem... maybe some of you can provide some pointers... unfortunatley, I'm one of those "all or nothing" kind of people. Last time I did WW - everyday was basically my first day, because as soon as I screwed up - that was it for the day! For some reason I have it in my mind that unless conditions are perfect for take-off - I stay grounded! I see that this seeps into other parts of my life as well - I can't do A, which I really want to do - because B, C and D aren't done yet. (The reason my 10 year old DD's baby scrapbook is empty!)

I could also admit that I hate for anyone to watch me - :eek: - not on the treadmill, not walking on the street, not eating in the car (:cool2: ). Why do I care??

Okay - that's it for me today! I do plan to be on the treadmill this evening - so maybe I can walk off that coke!

Just had to vent for a sec. So Karen, (my BF here in town) gave me a belated Christmas present today since it was the first time she and I had been out just the two of us since before the holidays.

And guess what it was?

A huge tin of this type of chocolate that I love! OMFG! What was she thinking??? She knows what I am going through with weight right now. KNOWS it. So why would she do this??? Frustrated. And fortunately, it is all sealed, so it will be easy for me to resist so that I can re-gift it, which I most definitely am going to do!

Went to Ireland in 2003 for 2 weeks in July..spent the whole time in Northern Ireland with friends...kids loved it...can't wait to go back...they are actually coming to Orlando this sumer and we will meet up then...met in Disney World so it wil be fun...

I am really sorry your heart seems to be split in so many places right now...I do hope that the rest of the year mends itself because we both do not need anymore stress...

As far as food goes...breakfast had water and 1/8 of an egg mc muffin...lunch was 2 veggie dogs (not sure I love them enough to buy them again...) and a huge mixed green salad w/ ranch, 1 cup of bean sprouts and 2 tbsp of cashews...very filling and at less than 400 calories so far today...so Kat - thanks for the idea of veggie loading...it sure is filling...

And Baylor's last piece of cake is screaming from the kitchen...white cake with buttercream...but I told it to F off...so we understand one another for now...:laughing:

I really am sick this time ~ strep. Yucky! Ok for the challenge - I am down almost 2 lbs and have exercised 2 1/2 hours. Baby steps, but I need to do more this month. And I only weighted once this week. That nearly killed me because I was just dying to jump on it several times.

I almost typed, "well at least my family is safe and healthy" and then I had to stop myself. At least we are all alive. At least we all have hope. Hope, that I can hang my hat on.

It looks like my husband and his dad are going to Dublin to see my BIL. I spoke to my SIL yesterday for over an hour and it was very good to hear her perspective, but very sad, too. We had all decided last night that is is better to do something then nothing, although my MIL is surprisingly pessimistic. Or perhaps she thinks he's going to find his own way out of it. She seems to think he is doing/feeling better and happier and I don't buy that for one second. His life is essentially still in shambles. And oh, yeah. His wife wanted to come for Christmas. He was the one who told her not to. Now, that hit me like a ton of bricks.

Try to visualize 2.5 pounds of fat. While not a true comparison, I typically think in terms of butter. 2.5 pounds of fat....thats TEN STICKS OF BUTTER. Go to your fridge, take out the butter and place 10 sticks on your body. That's what you lost.

Thats a great visual, but I have to admit - I don't know what a stick of butter is? Ive never seen it in a stick - only tubs or packets!

Sometimes I wonder why I say these things out loud. :rotfl:

BTW...looking at wedding dresses...so I can put them up for motivation...I ain't wearing no stinkin mumu...

They also said there are items now (Presto made the one they raved about) that can put reg. popcorn into the microwave to air pop...obviously a huge calorie savor from greasy reg microwave popcorn...

I make my own bread and the recipe is pretty easy and fairly healthy, note I said fairly because it is still bread.

We eat a lot of beef here but it is because we raise our own and it is Charlais beef with not much fat or mottling in the meat.


We had Charlais' growing up. Don't hear that breed very often - at least around here.


In the end, his life is his life and we will support his decisions. But don't end your MARRIAGE like this. And if you're not ending your marriage, but taking time for yourself, fine. But do it with love and compassion.

Melissa - just cause you have a coke doesn't mean the day is lost. We've all been there and I still have days like that. But I can tell you, YOU, that all is not lost. Count it. Track it. Don't eat the bread at dinner. And hells yeah, get on the treadmill and work it off sista.

I don't like people watching me either. I don't want to be noticed. I want to be invisible, unless I do something brilliant. I digress. Espically when you are overweight, you want to blend in cause you feel so conspicious. Not at ease in your body. I so want to be at ease and blend.

Kelly - sticks of butter are so convienent. When you need 1/4 cup you just cut off what you need. No dipping out of the tub and getting your measuring cup all messy.
