No big deal... get a pot with water. Turn it on... place chocolate in another heat safe bowl on top of the pot. Voila! Double boiler.
Just be careful that no steam gets to the chocolate. It will cause it to seize. Water and chocolate are not friends!

What's the best kind of chocolate to use for the dipping: semi sweet, milk chocolate, or other?
I'm actually mixing the milk chocolate with dark chocolate... you know, so it gets even MORE CHOCOLATY!![]()
Don't mix the dark and the milk chocolate together. If you want to dip them in milk chocolate first, let excess drain off and dry and then re dip in dark chocolate.
The milk and the dark will not blend together well if you combine the 2 chocolates.
These were amazing~ I used almond bark to coat them and unfortunately DID NOT have solid shortning to thin the chocolate out so the coating hardened a bit quickly...still amazing though.

Just make sure you use BAKING/MELTING chocolate! I made the mistake of using chocolate chips the first time; oh my, huge mistake.
