Thanks to restaurant.com, I finally am motivated enough to try the restaurants at Swan/Dolphin. I bought $25 certificates at each S/D restaurant that was offered. 
Last night -- Il Mulino. I had all the S/D certificates with me. We selected this restaurant just because we came across that first.
2 adults.
We entered from the atrium type area, where we walked into a very busy bar area. No one greeted us or anything so we were wondering where the podium is. Found the podium on the other side away from the crowded bar/lounge area.
We were seated immediately. (Notice -- no ADR, dinner time, Saturday night, holiday weekend.)
We each ordered unsweet tea. Their tea comes:
1) unsweetened
2) bottled, with two flavors to choose from. (It was Republic of Tea brand.)
Might as well say $4 a bottle. We each had Blackberry/Sage.
DH ordered:
Salmone - Sauteed Salmon in Garlic and Olive Oil with Wild Mushrooms over Broccoli Rabe
I ordered:
Spaghetti Carbonara - Spaghetti with Pancetta, Cheese and Egg
I still have nearly half my order in the frig.
We were brought a small plate of eggplant and sliced meat. The eggplant was marinated and had garlic and tomato in it.
I forget what they said the meat was. It was round like a sausage, but very thinly sliced and dry.
Both were good.
Then we also got a bread basket. One with fresh bread.
The other bread was a garlic flavor bread cut in small strips. Kind of like a cross between a crouton and garlic bread. Actually it had just enough burn on it, I could smell it and taste it. And it even tasted stale.
DH's piece of salmon was LARGE. He said it was really good. Although the broccoli rabe he said was like finely chopping broccoli and cooking it till it was mushy. So I have to say that part did not sound enticing.
When I order the Spaghetti Carbonara, the server explained they made it the authentic way, not the way we Americans usually are served it evidently. (It has been so long since I have had Spaghetti Carbonara I couldn't recall how the sauce was!
But any I had in the past would have been in authentic family owned Italian restaurants.)
The spaghetti was cooked perfectly. Chef Ramsay would have been proud.
The sauce was very good. It was like a real buttery, light chicken stock. I am sure there was more to it than that. But that was how I would describe it.
From what the server was suggesting, some think they will get their spaghetti covered in a thick, cream sauce.
The meat actually looked pale and unappetizing. But actually very good. Good flavor. Not overpowering. And the same can be said for the onions in the dish. I hate onions. And this was fine. Onions were used as they should be -- as an added flavor. Not heavy handed.
Very good. Although I think next time we would each order something different. DH was leaning closely towards the pork chop last night.
We split a dessert -- Tiramisu: Layered Espresso and Coffee Liqueur infused Lady Fingers coated with Marscapone Cream ($10). And as expected in was VERY Good. Hard to beat. And splitting it was plenty for both of us. It was a large piece.
And the server even offered to validate our parking. (Although we just parked and walked over from the Boardwalk.) Now that we know they validate parking, we will probably just park there next time, for "the experience". The Boardwalk is just a short walk away. And I like to walk at least a little after a meal like that.
Looking forward to our next food excursion to the Swalphin!
