If one has 3 days....?

We are taking our daughter, Son in Law and three year old grandaughter to WDW in Feb for 3 full days (staying at SoG). We'd like to make the most of our visit yet not kill ourselves trying to do too much in too short an amount of time. We're interested in the MK and MGM-Universal, with possibility of Epcot as time allows. None of us are interested in AK at this time. Would you just plan on one day for each park or is that even being too optimistic and possibly exhausting? We'd also like to give the daughter/son in law time (perhaps an entire day?) to enjoy on their own while we care for our little 'grandprincess". princess:
We haven't done Disneyworld in almost 20 years so feel like complete novices. Any suggestions welcome!
 
With a 3 year old I would say spend at least one whole day in the MK. If it were me I would forgo Universal for this trip. It takes 2 days to do that and I would hate to pay for another ticket and not get to see enough.

I would do MK for a whole day.
On day 2 I would do MGM early, leave to rest at the resort, then visit World Showcase in Epcot in the evening.
On day 3 I would pick what rides really need to be done in Epcot and probably head over to the MK after.
Just an idea of course.
 
I think a 3 yo would love many things in many differnet park, but od only 3 days I wold suggest...

MK day one so she can see the castle, rides fantastland and visit lots of characters, see the parades...you will easily spend a whole day here and the fireworks were a big hit with our 3 yo so you may want to take a mid-day break and come back in evening for fireworks and perhapd Spectromagic parade if it is showing on a night you are there...

You said MGM-Universal...just to be sure that you know that MGM is not Universal studios, that is a different park off Disney propery...there is plenty she would love at MGM...Little Mermaid, Bear in the Big Blue House, Beauty and the BEast show...could probaly do in 1/2 a day...lots of character here too...maybe evening #2 ould be fireworks at EPCOT...Fantasmic at MGM might be too much for her....

day 3 play by ear and perhaps don't plan and see what she wants to do...may want to go back to MK or AK for Lion King show, safari for animals

have you thought about a character meal? she would love princess breakfast in Norway or Cinderella breakfast in the castle...also Chef Mickey for dinner would be my recommendations....maybe you could take her to dinner while parents go out for a grown-up meal...the buffets are kid friendly especially at chef mickey.....
