We are doing the Backstage Magic ABD, but our date got changed so our plans are up in the air. We have a late (10 p.m.) flight home out of LAX, which I'm guessing means we will want to leave DL around 7 p.m. In the meantime, is there enough to do without going into the parks? We won't have a ticket for that day unless we buy one, and since we'll be doing a lot in the prior days I'd like to look at other options. I'm used to WDW where you can do everything from riding horses to renting boats without ever going into a park. Any suggestions? We'll be at the Grand Californian till checkout time and then we're on our own.

Downtown Disney has some WONDERFUL little shops. ;) Personally, I could shop there for hours without getting tired of it.

I second Downtown Disney. You can go see a movie at AMC, play in the ESPN zone or just shop and eat. Swim in the pool in the morning. Visit the other hotels and check them out or explore the GCH.

I agree that Downtown Disney is going to be your best option. You might want to hold off visiting there alot before your last night so that you don't run out of things to do. You can find a map for it and see what restaurants, etc.. you may be interested in. There is even a bookstore and I love to go to bookstores and read and relax. You also can access Downtown Disney directly from the Grand Californian (an easy walk). They will hold your bags for you upfront until you are ready to leave for the airport.

my only caveat is that traffic between Anaheim and LAX is woefully unpredictable. I have had situations where it took more than two hours to get up there (and you didn't mention (I think) whether you are on a weekday or weekend--even weekends are dicey. So I would leave much earlier than 7 p.m. for a 10 p.m. flight. You would be better off taking a leisurely drive up the coast and cutting into LAX and being up in the airport area around dinnertime.
