I pack our breakfast foods in flat Rubbermaid containers (the kind that slide under the bed). We stay at POR but, as a family of 5, it gets very crowded. I put the breakfast stuff on the table or shelf that hangs on the wall & then use the Rubbermaid for various items that we may need during the week but not every day. It's great to store toiletries such as 1st aid kit, aloe vera, etc that you don't want to leave at home but hopefully won't need.
I slide our suitcases under the beds to make more space.
I pack our extra shoes (& whatever else I can fit) for the drive down in a laundry basket then set the empty basket in the closet floor for dirty clothes. I do laundry mid-trip so we don't need to pack as much.
