The Amex airline fee credit is typically limited to incidental fees, like bags and in-flight amenities, etc.; however, it's known to reimburse gift cards from AA, Delta, and SW. If you want to bank the value of this credit as a gift card, you'll have to select one of these three airlines. You can trigger the credit by buying 2x $50 Delta gift cards in separate transactions, or a $100 gift card for AA or SW. Then you'd do this again when the airline credit resets on 1/1/19. It's always best to check the latest DPs before purchasing gift cards to use the airline credit, because technically gift cards are excluded.
However, you may have been approved a week or two too early to triple dip the airline credit.
The first billing statements on my recent personal Amex cards closed about 24-26 days after approval, but I've had a Hilton Biz statement close as fast as 13 days after approval.
You have 30 days from the closing date of the billing statement on which the (2nd year) AF appears to cancel your card to get a full refund of the AF. The 1st year AF is billed at the end of your 1st month's statement. The 2nd year AF is billed at the end of the 13th month's statement. After that, there's no refund.
You'd want your 13th month's statement to close at earliest a week into December 2019, which would give you 30 days from then (at least a week into January 2020) to use the third calendar year's airline credits. However, your 1st and 13th statements may close in late November, which would not give you enough time to use the airline credit in January 2020 before you have to cancel the card for a refund.
The Amex Gold is a solid card now that it earns 4x MR at restaurants and supermarkets, has a $100 airline fee credit, and a $10 monthly dining credit at the Cheesecake Factory, Shake Shack, Ruth's Chris, and GrubHub/Seamless, so if it's a keeper card for you, then double dipping and triple dipping the airline credit loses its value.
