I totally agree - ultimately your own individual taste will determine what you enjoy the most. My person favorite is Universal Studios, but I'm a big film buff, so that atmosphere and theming appeals to my taste. Universal cannot be topped when it comes to sets. That being said, my second favorite park is MK, and I feel there is a magic

and joy there that I don't feel is replicated in any of the other parks, as much as I love them all.
I've also noticed as I've visiting the parks over the past 12 years that each of the parks tend to have their great times and not so good times - times when maybe not everything is running as tightly as it should, or maybe some of the food is a little below par, etc. I can't actually say, though, that any of the parks, even in a down time, was so out of whack that it ruined my experience. So I do think that you would enjoy any of the parks, especially if this would be your first visit to that park.
If I were to offer any negative opinions of Universal at this time, it might be that, to me, it seems like some of the older rides/attractions might need a little freshening up. Maybe there is an effect that isn't functioning up to 100%, or the sound is a little muted, or the lighting is a little off. However, I'll also say that, if you've never seen these attractions, you'd never know anything was different, and the experience is still extremely enjoyable. And the newer attractions are, well, off the chart terrific.
So I think you might really enjoy your visit - if you do try for both parks, go for front of the line pass. It may just save you enough time from waiting in line that you can indeed see the high points of both parks (although you might want to try for an early shot at technical rehearsals for the Simpsons if Express is not up and running there yet).
