I don't wanna cook today

I think I am coming down with a sinus infection and I feel horrible. I took a package of boneless chicken thighs out of the freezer yesterday. I have a pretty well stocked kitchen when it come to ingredients (I usually LOVE to cook) so if you have a recipe, I probably have the ingredients. I am asking for some help from my fellow Dis'ers. I want an easy yet tasty meal I can make with the least amount of effort possible. I plan on planting my tush on the couch and watching some bad television allll daayyyyy.

It is still early enough for me to throw these suckers in a crock pot, but I usually do chicken caccitore when I do that, so I'm looking for a change. I would aske DH to cook them, but he worked and overnight last night and frankly, he can't cook. At all. We would end up having pizza, which is great, but I'm trying to limit our ordering out and we just had pizza Fri night and that wouldn't solve the issue of what to do w/ the chicken.

Help! Please!
 
Throw the chicken in the crockpot with a full bottle of bbq sauce (I like Diana brand). Cook all day (you may just need to add 1/2 cup water). When ready to eat just slice up the chicken while still in the pot (as messy as possible really). Fill up fresh buns and serve with salad. Easy and yummy!
 
I'm doing creamed chicken and biscuits today. Its kind of like chicken pot pie without the pot and the pie lol

Throw my chicken in the crock pot with two cans cream soup and a can of milk some poultry seasoning and bay leaves.

About 4-5 hours later I shred the chicken and add a bag of frozen mixed veggies. I serve over baked biscuits.

Good comfort food on a cold day.
 

How about chicken soup?

Yes, easy and satisfying!!!

I would probably cook off the chicken, throw some potatoes, carrots, peas and onions in the meaty broth, then add some Bisquick dumplings to it.

I make lime chicken tacos/nachos in the crockpot. Put your chicken in the pot, I use about 1 1/2 pounds. Combine 3 Tbs. lime juice and 1 Tbs. chili powder. Pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender. Shred the chicken in the slow cooker. Stir in 1 cup frozen corn and 1 C. chunky salsa. Cover and cook on low for 30 minutes or until heated through. Serve as tacos or over tortilla chips.

Very yummy, and low maintenance.
 
cook it down til it shreds and add bbq sauce for sandwiches. bake a couple potatoes and pull out the salad in a bag. Have someone else set the table and clean up. Voila!
 
Thanks for all the great ideas... I ended up using a recipe I found online... it sounds really good, I will let you know how it turns out.

Crock Pot Sweet and Sour Chicken
2 lbs. of chicken
1 small onion, sliced
1 red pepper, sliced
1 green pepper, sliced
20 oz can pineapple
1/4 cup brown sugar
2 Tbs. cornstarch
1/4 cup cider vinegar
1/4 cup water
1 Tbs. soy sauce
1/2 tsp. salt

Put the chicken, onion and peppers in the crockpot. Drain the can of pineapple (saving juice). Set the pineapple chunks aside for later. Mix the juice with the rest of the ingredients and pour over the chicken. Cook on low for 7-9 hours or on high for about 4-5 hours. A bit before serving add the pineapple chunks. Serve over rice or chow mein noodles.

I will have DH make some rice (even he can't screw that up... I think) and presto... dinner that I think everyone will like. The only thing I didn't have was the red peppers, but the kids hate peppers anyways so no biggie.
