The only produce coupon I've ever had in my hand is a $5 off coupon for produce at Safeway. Alas, my Safeway's produce isn't that great and I rarely buy it there. 
The coupons I mainly get (the catalina sort) are for Morningstar Farms, which is a brand used a lot here in my condo. It's junk food, that's for sure, especially now that it's owned by Kraft or whoever, but it gets used and so do the coupons, as long as the items are already on sale (they've been playing with the price on the products for the last year or so, it's getting annoying).
And we have no stores that do double coupons.
So we have a high grocery budget and only rarely get the benefit of coupons. Here, for what we buy, at the stores I go to in my area.
I feel the opposite. All vegans and vegetarians *that I know* understand that the life of an animal raised for food is generally pretty bleak. They live in misery and then are killed. That's why it's generally those groups that try to get better living conditions for those animals, even though, yes, at the end, the animals are just going to be killed. But it's about making the animals happier and healthier during their lifetimes.
Most omnivores that I know CHOOSE to NOT think about it at all. Otherwise they say they couldn't eat it, and my omnivorous friends do not want to change their diets, so they don't think about it at all.
So my experience has been 100% opposite of what yours has been, in terms of who understands what about animals raised to be eaten.
The OP's post really set itself up to be one of "those" posts, though. There wasn't an ounce of "people in different areas with different stores might not have this same experience", and it was ALL "they are wrong". Now, I know well what it's like to have those feelings; but I don't start threads about it.
Just using the demeaning and derogative term "mommy war" is judging and commenting and beating people up figuratively. That's such a nasty little phrase and people don't even THINK about it. Like using "girl fight" or "cat fight" describe a physical altercation between girls or women. Just shows absolute contempt for women and what is important to them. And, sadly, the phrase is usually used BY women.
That's exactly what I thought when I started reading all the "yes there are healthy coupons" posts.
Organic means that you don't use "'icides" on your food. So no frightening chemicals. You find more natural ways to help the plants thrive rather than just killing the bugs that find their way to your area. Organic = fewer chemicals = better for living bodies.
This blog might be too specific for their area to be of huge amounts of help, but this couple started off with container gardening. BIG containers, but containers all the same. Might be some good reading if you can find where they talk about the containers (skip the bee parts if you're nervous about bees...but ya gotta have bees for gardening!). The author of the blog is a bit wordy.

Of course if you are a vegan who uses no animal products you probably wont get the difference. Most people, and all animals raised for food would get it.

I think a lot of it depends on the definition of what we all consider "healthy" too. A lot of what you put in your post I wouldn't consider "healthy" by my personal definition.
